Curry puffs are one of many favourite kuihs of Malaysians. This snack is sold in stalls by the roadside and at malay or indian eateries.

Curry puff may look like another puff pastry but it is the unofficial king of 'kuihs' for many of us in Malaysia and around the region. 'Kuihs' can be either sweet or savoury. Crispy deep fried curry puffs are best when eaten together with a glass of Malaysian sweet tea Teh Tarik. I love having freshly made curry puffs where the fillings are still warm. That, to me, is the optimum time to devour them!
Curry puff is a no fuss recipe. Easy to prepare but so delicious! I am not exaggerating when I said it is a kuih "to die for". Even the cameraman was requesting for seconds! With every bite, you will notice the flakiness of the dough of the curry puffs and the delightfulness in savouring them. The fragrance of the filling makes the curry puffs even more delectable as you savour every mouthful.
I especially love the sides of the curry puff where it is distinctly twisted. It is the crispiest part of the 'kuih' and biting into it is bound to have you asking for more!
If you do not have curry leaves, just omit it from the recipe. You may also add diced chicken breasts, according to your preference. Reduce the among of diced potatoes if you do so.

just want to share good tips to fry curry puff (karipap) with smooth n silky skin fry them in low heat for the first minute (until the dough turn a little white/not wet anymore), then use high heat until it turn golden brown....enjoy having good looking curry puff

Hi Grace I want to say a big thank you and love your asian cooking recipes so much. I am a Singaporean but live abroad and miss all these delicious local food . I miss you, Grace! Where are you now? We call this empanada in the Philippines. I like the Philippine-style of mixed vegetables and protein inherited from the Spanish, but I add some curry powder and curry leaves because I like the taste of samosa better than the Philippine-Spanish recipe. Then I use this dough recipe for the dough but I find that 120 ml (1/2 cup) of hot oil is too much for 2 cups of flour. The first time I made this by following this recipe faithfully, I ended up using 4 cups of flour to make it less wet. So now I use 60 ml (1/4 cup) of hot oil for 2 cups of flour.

I don't know about you guys, but my mother used to make the filling using sweet potato( keledek) and its taste even better than the potatoes, anyway its only my suggestion, u can try it and taste for yourself

If you use this dough it will not crisp and brown evenly when you bake it as it is only suitable for deep frying. You can use short crust pastry as it is suitable for both frying and baking (some people use short crust pastry to make curry puff). Here's the recipe for short crust pastry that I've made for you. 220g :Plain flour 110g :Cold salted butter,cut into small pieces (you can use unsalted but add more salt afterwards) Few tbsp :cold water Method: 1)Rub in butter and flour together using your fingertips until it resembles breadcrumbs or you can use food processor using pulse button for few times. 2)Add cold water and bring the dough together until it becomes a ball of dough. Wrap in plastic wrap and refrigerate for atleast 30 min while you prepare the filling. 3)Take a small ball of dough and roll it into desire thickness. Put filling in the middle and seal the edges (like in the video). After you've done it. Refrigerate for at least 15min. 4)Preheat oven to 350°F/180°C. Bake the curry puff for 15-20minutes or until golden (you can also glaze your curry puff before baking just to make the outside shiny and preetier)

Soha Alwakeel yes sweet potato can be used. U can mix both or use only sweet pot. Cooking is flexible just use what u want

I find it interesting that you spelt it as "karipap" because here in Singapore, the Malay name for it is "epok epok". This is the first time I am seeing "karipap".

+Kimberly Louis you just need to keep adding water until the dough gets soft like "play dough". Many actually came back with similar comment, I will give the exact amount of water soon. >,

actually when i first added the hot oil to the flour, and mixed it, it came together very nicely and smooth, even without adding any cold water. but it felt a little too mushy, and added the cold water thinking it would get a little firmer!. so idk what went wrong after i added the cold water!

Prefer the ones made with lard that have a flakey consistency and look like sea shells. Lots more work but worth it.

Outer layer is similar to Ghughara recipe of india.. But u hv used lots of oil in dough preparation.. Actually it doesn't required for crispy layer.
