INGREDIENTS
1 lb cabbage thinly sliced or shredded (454 g)
2 medium carrots shredded (113 g)
1/2 of a red onion thinly sliced (92 g)
2 tsp (2 g) Mexican oregano
1 Tbsp (12 g) salt
2/3 cup (157 mL) distilled white vinegar
2 cups (473 mL) water

This looks so good 👍🏼 My MIL is from El Salvador she uses the same mix of veggies but for a quick fix she will just use a jalapeño can and pour the juice that’s in that in the mix. It’s so good and spicy. Some times she will just buy a bag of coleslaw and a jalapeño can and it’s just the same.

In my house, I learned to put the cabbage and veggies to soften with hot water (soak for 10 mins or so), or with salt (half a cup for a large half of a cabbage head, let stand for half an hr, then rinse) to speed up the pickling. Then add the vinegar and water mixture as shown. Don't add salt if you did the salt maceration though. I store mine in quart mason jars and add peppers to some, extra onions to another. Choice is the spice of life! 😄 They're best if eaten within a month.

I never understood why they would soak in hot water. Wouldn't the acid soften the veggies?

Yessir! At some point I'll make this. I've gotten my girl on board with pupusas (because duh) but not so much with curtido lol. Sup to all my Salvadorans and Latinos out there! And sup to anybody else who's reading this, be it Black, Asian, Middle Eastern, White, Islander etc. Be cool and stay safe 👍🏽.

pretty lady..thank you so much for teaching me how to do this i always wanted to make it..i would see videos of spanish ladies showing us..but i just coluldn't get it..and with u i did it in a second...u make it seem so simple for us..that is why i love watching ur videos..and ur voice is so soothing..and understandable when ur explaining..❤❤❤❤

This is so good with Pupusas 🫓 😢. I’m not Salvadoran but I had a friend who was and I was always over his house and I love Salvadoran food so much I moved away long time ago and miss the food. I live in the Midwest no Salvadoran restaurant out here 😢😢😢😢

Great recipe - Thanks. I really love Curtido. I bought some Curtido at Costco last year out of curiosity and it also had ginger and apples from what I remember. It was rather good. I now make this myself at home and experiment from time to time. 🙂

This is exactly how my mama always makes her slaw that not mayo-based, except she uses celery seed for the spice. I’m going to try this next time I make this kind of slaw.

I have like 5 bottles of different variations of this in my fridge lol. I reuse all my glass bottles for it and just keep adding ingredients as it gets used.

I’m dating a real swell guy who’s half Salvadorian and he loves papusas! I’m making this and pickling it for the next day for when I make the papusas. He’s vegetarian so I’m making my own mushroom based papusas so I’m excited for him to try it! It’ll be the fifth time I’ve cooked for him and so far he’s loved everything! Fingers crossed! This was such an easy to follow video and I’ll definitely be subscribing!

how did the vegetarian pupusa go? any tips? i usually only can find the loroco queso ones but i want to cut back on eating cheese.

I LOVE curtido!!! I also love that cabbage salsa they have at restaurants, is the recipe the same? If not can you do that too?

Combine, 1 pound or 1 &1/2 shredded cabbage, thinly sliced small or 1/2 medium red onion, 2 medium shredded carrots, 2 teaspoons of oregano. Boil 2 cups of water w/ teaspoon salt add 1/3 cup preferably white or apple cider vinegar when it gets to rolling boil, remove from heat. Pour that solution over the cabbage mixture. Preferably into a glass bowl and cover it. Leave on counter covered for atleast 6 hours or preferably day before.

Tip: Mama's recipe calls for Mexican Oregano (aka Oregano Cimarron - wild oregano). Mexican Oregano (Lippia graveolens) is not related to European oregano (Origanum vulgare). They have a similar taste but Mexican Oregano is stronger. If you use European oregano it will start tasting like a Mediterranean dish because the flavor is similar, not the same.

Can you switch vinegar and water for lime juice? Also how long is it good for once you put it in the fridge? I was wondering how the Salvadorian restaurant did there's, I hadn't thought of Oregano so that answers that. Thank you!

Tried and loved the rice and ice chest idea for my nieces graduation party and it was a hit!😁 1 question I have for this recipe can you add serano ,green chile or jalapeño to this recipe? You can add all sorts of veggies to this, just make sure they're either thinly sliced or in small pieces. My 2 brothers like curtido with sliced jalapenos and thin slices of carrots, instead of having them shredded.

Is this similar to the pickled cabbage mixture you get with some Mexican restaurants? I love that stuff and have always wanted to learn how to make it. Most of the time there is also jalapeños though.

Can this be eaten as a salad? I am not familiar with pupusas. But wonder if this can be served as a side dish with a steak or some other baked meat.

Yes it will taste the same...the only difference is that Mexican oregano has a stronger taste.
