I have a family of four and I could spend 100$ and feed us all for about two weeks or longer, and I live in California. It’s all about stocking up your fridge and pantry so I always have ingredients for multiple meals and groceries shopping is just refreshing my stock pile. I make my own stocks, pasta sauce, sourdough bread, dehydrated fruits and vegetables and it’s helped my budget so so much.

I really appreciate the discussion of the toll cooking professionally takes on the body. I thought pretty seriously about going into cooking as a career as a teenager after a kitchen job I really loved but joint problems run in my family so I know I couldn't do it long term. My back was complaining enough at 16 there was no way I could make it to 40 let alone retirement.

I love seeing other culinary cooks agreeing on the fact that the title "chef" is more serious and shouldn't be thrown around so easily. It's a huge sign of respect and imo you need to earn it over time, contributing to the culinary industry. There's a difference between being a cook, and being a chef. If you've ever seen the movie Burnt or other chef movies, it might explain it.

Corn, wheat and grains are subsidized in the US via farm bills. Actual fruits and vegetables are not. As a result, it's cheaper to buy garbage in a box than it is to buy fresh food. If you're careful, you might be able to get in-season fruit for about $1/lb (453g), but it's not uncommon to spend $5 on 8oz (225g) of spinach. I just bought 1 lb (453g) of strawberries on sale for $6.48. That's a pretty good price. I live in Texas, so I've got easy access to cheaper fruits and vegetables than most, since I'm right smack in the middle of the US. This is one of the big reasons that Americans struggle with obesity. I can get 40 chicken McNuggets and 2 apple pies for less than I spent on a tiny container of strawberries.

@@belaayya5094 yes ! I have some american friends who explained the same for me, while the world makes fun of america i think it’s better to have empathy for them as the fast food culture there is highly commercialized and the government encourages unhealthy eating ( the fda also allows many e numbers and other unhealthy addons way more then here ) i really wish there was a way this could be turned around since so many americans are getting overweight so easily and are basically enabled by the government to have a disturbed eating pattern

@@tardis358 - I'm not going to doxx myself by an exact location, but I am in Texas. Just checked prices at two stores here... $3.56 for 5oz of of organic spinach, or $4.92 for 10oz of cheap spinach. That's 71 cents an ounce and 49 cents an ounce, respectively, making it $5.68 for 8oz of the good stuff or $3.92 for 8oz of the cheapest. So, $4.80 for 8oz is the average between the two.

About 5 years ago I swore off fast food. Now on my off day I shop and meal prep for the week. This saves me a ton of cash as I'm not spending it on overpriced junk food not to mention healthier, and it's easy for when I get home and don't want to cook for myself after being in a kitchen all day.

“Most chefs don’t want to be called chefs unless they have the biggest ego.” So, she’s a chef, who doesn’t like being called a chef. Wha-

I think it’s kinda because there’s this assumption that if you’re a chef then you must be an asshole, arrogant and all that since great chefs have been highly portrayed as that being needed in them to become great. Obviously this would be with the assumption that everyone who cooks for a living wants to become the great renowned chef. Which isn’t the case in the majority of people who cook. Most just truly enjoy the beautiful caos of a kitchen life.

Fruits and vegetables are not subsidized in the US like corn and grains are. This makes them extremely expensive.

Cut off half my thumb once. Tossed the nub in the trash, tossed my board to be cleaned, wrapped my thumb, smoked a bowl and was back at my station within 20 minutes. I tell people this and they laugh, I hold up both my thumbs and they say, "ohhh shit " We aren't allowed to hurt bit sweet baby jeebis on a gumdrop we do. I have 400 dollar insoles.

Cooking is SO hard on the body. I have an autoimmune disease and basically can’t move when I come home from doubles. Between the edema in the ankles and the burns. Just sucks sometimes! But I wouldn’t change it for a thing. I love this industry and I want to help work towards change in it. We need healthcare. We need time off. We need livable wages. And we need to come together as a family instead of competing for the same jobs. I hope that I can do this at my place and be the change in the future.

5:31 How expensive is the shop they go to? That fucking bread alone costs 5.99. Food for less costs 1-2$ for decent quality bread that lasts the whole week.

23 years old with 5 years in the restaurant industry so far. It’s very physically and mentally demanding at the same time, all day and all night. BUT: it’s the best fucking job I’ve ever had and despite all the injuries and stress I’ll never leave the kitchen unless I lose a leg, and even then you’d have to drag me out!!
