This is probably one of the easiest daal recipes I make. I hope you give it a try!
DHABA STYLE YUMMY DAL
Preparation Time: 20 minutes.
Cooking Time: 50-55 minutes.
Serving: 3-4 people.
Ingredients:
1. Chana dal (split chickpeas) 1 cup.
2. Moong dal (yellow gram beans) ½ cup.
For boiling the dal:
3. Bay leaf 1 pc.
4. Cinnamon stick 1 pc.
5. Turmeric powder 1 tsp.
6. Garlic cloves (sliced) 3-4 pcs.
7. Water 4 cups
For Cooking:
8. Oil 4 Tbsp.
9. Ghee 2 Tbsp.
10. Onion (sliced) 1 cup.
11. Garlic cloves (sliced) 5-6 pcs.
12. Ginger paste 1 Tbsp.
13. Coriander powder 1 Tbsp.
14. Cumin powder 1 tsp.
15. Turmeric powder ½ tsp
16. Less spicy red chili powder ½ Tbsp
17. Salt to taste.
18. Leftover meat gravy.
19. Water as required.
For garnishing:
20. Oil/ ghee 1 Tbsp.
21. Green chilies (slightly slit) 3-4 pcs.
22. Red chilies 2 pcs.
23. Some chopped coriander leaves.
24. Less spicy red chili powder ½ tsp.
Procedure:
25. Soak 1 cup chana dal for 3-4 hours. * 1 cup dal = 2 cups of soaked dal.
26. Wash it properly and put it in a pan.
27. Dry roast ½ cup of moong dal for 1-2 min. on medium heat. Wash thoroughly and add to the chana dal.
28. Add 4 cups of water. Turmeric powder, bay leaf, cinnamon stick, and garlic cloves. Cook for 30-40 minutes until the dal is cooked properly. The lid will be on. Stir occasionally. After 20 min reduce the heat to low. * If using a pressure cooker, add 3 cups of water.
29. In the meantime, we will make a spice mixture. Add all the powdered spices and ginger paste together except salt. Add some water and mix to a paste.
30. When the dal is cooked, roughly beat the dal to mash some of the grains. We do not need to paste. Turn off the heat.
31. Heat a pan. Add oil and ghee. Add the sliced onion and garlic. Cook until lightly golden.
32. Add the spice mixture. Cook it nicely. Add some water to cook properly. It will take 4-6 min. (approx.).
33. Add the leftover meat gravy you have. Remember, boil the gravy before adding it to the spice.
34. Cook it for 2-3 minutes. If needed add a little bit of water.
35. Add the cooked dal. Now, add salt according to taste. The gravy has garam masala in it. So, I’m not using any garam masala.
36. Cook it for a while. You can add water to adjust the thickness of the dal of your choice.
37. Transfer it to a serving bowl. Now, we will garnish it.
38. Heat 1 Tbsp of oil/ ghee. Add 2 red chilies. Some green chilies. Add some chopped coriander leaves and ¼ tsp of red chili powder. Fry them for 5-6 seconds. Add on the dal.
