Thank you for joining me on making my chicken pot pie, which was amazing, but man did I struggle with the crust.
I’ve made homemade crust lots for pies and for my cooking but for some reason, I just couldn’t figure it out and so you’ll see in this video. I had to conquer it so I ended up making an apple pie in the end to show myself that I for sure could make this crust. I refuse to give up.
The chicken pot pie was absolutely amazing. The crust was nice and flaky except a little too flaky so I think I’m going to have to play around with it when it comes to the shortening and maybe reduce the amount of shortening butter ratio. I think the shortening was just too warm and it was melting everything and the crust wasn’t setting up like it should.
Chicken pot pie is one of the most asked for meals when I cook for my kids. And it’s so simple to make.
Chicken pot pie ingredients:
4 pounds of chicken breast
A half a pot of water
Various spices to make your own stock
4 cups of chopped carrots
One large, yellow onion, chopped
2 to 4 cups of chopped celery
Garlic, minced onion, dried parsley, or fresh, white pepper, salt
One cup of flour
Heavy cream and homemade chicken stock to make the roux
Two sticks of butter
Crust ingredients:
Flour, salt, butter, and water
So this is just a rough ingredient list. Make sure to check out the video for the exact measurements.
Directions:
1. Two a stock pot you’re going to add your chicken the spices that you want to use and a half a pot of water.
2. Cook that on medium heat until the chicken is done and the water has a nice yellow color.
3. Chop up all your veggies and into a pan with a stick of butter add them, and the spices and cook into the veggies are tender.
4. Once the stock is done your chicken and chop chunk.
5. Remove the veggies from the pan add another stick of butter, one cup of flour, salt, and pepper, and cook on medium heat until it forms paste then slowly add around 6 to 8 cups of stock then your 2 cups of heavy cream. Making sure to whisk the entire time to thicken.
6. Once the roux is made at your veggies and chicken back to the pan, stir it and set aside.
7. Make your crust place it on the bottom of the pan then add your filling and the place a top crust on. Brush it with melted butter or egg whites and bake at 375 for about 40 minutes until the crust is nice and browned alittle.

Hi Heather, I just wanted to take a moment and tell you how much I enjoyed watching this video. The fact that you showed mistakes and dealt with it was nice and refreshing, really. I can tell you that when you mix butter and shortening together, it seems to do that. My Momma would use butter or crisco but not at the same time. My Aunt uses crisco shortening. Her crusts have always been super flaky and really good. I want to make that chicken pot pie for my grandkids. I have 7 of them 😊 and I know they will really enjoy it. Thank you so much for sharing your life with us. I am looking forward to watching more of your videos. Oh and I agree in regards to the green beans. My gram would plant kentucky Blue Lake pole beans, and they aways turned out delicious canned. I can't wait to see you all in the garden. Bless you and your family.

It doesnt matter that the pastry is short and you have had to piece it together, it will still taste delicious. Its a huge pan and I don't think many would be able to do it in one. X

Crust is a funny thing. You are like me, I won't let something beat me. I will do a recipe over and over until I get it right so I understand. One thing I like about you is you are o.k. showing not everything comes out perfect every time but you kept going. By the way I love watching your family video's and I love love your kitchen.

Roll out out on parchment paper, then chill again, and add it to your pan. Maybe do half at a time and fuse it in the pan.I think you were having difficulty because of the size, NOT the receipe . You are a ROCKSTAR!!!

Poor crust is my nemesis... you have given me the courage to try again. I did buy some just in case, though... I've taught many people to make perfect pie crust yet have never been able to make it myself. They say those who can't do it teach. 😉

Drool worthy! Roll the pastry out between sheets of baking paper, remove one and place the pastry face down into the pan and lift off other piece.

Thank you for your down to earth vlog. I like your style. I like chunky chicken not shredded. I’m 76 and fairly disabled… COPD etc but started veg gardening last year with raised beds…. I love doing it. Thanks again for your yummy recipe.👏x

Exactly. You dont know how many times I've pieced together pie crust cause it waznt cold enough or home was too warm. I stopped cooking when my husband passed away but now i rake care of my 82 year old mom and i enjoy cooking and baking with her...😊❤

The food processor motor generates heat. The more you pulse it the hotter the motor gets. Its always best to cut in by hand. The processor is melting the butter, especially in a large batch. I think it was just the enormous size. But in the end its how it tastes not how it looks. The pot pie looked great to me.

My paternsl grandmother had one and fried her frybread in it. It comes out best in a cast iron pan. It slso made great friend potatos also biscuits. I miss those days.❤😢😇🙏💕☺️🙏💯

I think maybe they u worked the dough to much or to much flour… also you could do the big pie crust cut in half roll on your pin and then do half and then the other half…also if you roll it on your pin then put on top of you pan and roll it out… I have a tutorial on my channel which explains what I’m talking about… don’t be discouraged… we are all learning something all the time l.. and your pie crust looks fabulous.. just keep trying..I do a shortening pie crust.. my butter never turns out right

For every ounce of butter add 1 tablespoon of water and always chill the pastry, it needs to rest so the water can be fully absorbed. If it's to hard when you take it out of the fridge leave it for a couple of minutes and give it a bash with the rolling pint to start it moving. Brush with beaten egg and a little water for a nice golden crust. Tip for cutting strips is to use a pizza cutter. At the end of the day, taste is everything, you nailed it!

Onion in fridge or freezer for 20 -30 minutes should help a bit. It’s pot pie! It’s going to be good no matter what! I notice a difference when I put the butter and Crisco in the freezer for a bit. You still fridge the dough before roll out. If you handle your crust too much it can get tough. Again-it’s pot pie-either way it will be great! It’s made with love. You do amazing everything for a large family. ❤

Or i think the first batch became too dry cause she kept kneading and adding flour then the next batch didnt mix well with the dough and was dry so it crumbled when he rolled out. The next batches she rush it. But it was perfect to eat. Who cares the way it looked. It looked fine to me and looked very good to eat. The apple pie looked great too. Jmo. We forget our family don't care what it looks like, just as long as its delicious..😊 Thats what my husband would say...😊❤

Stellar job! The mishap was just a slice of life. I would rather eat something tasty than to eat something beautiful that's nasty. One thing I do sometimes is freeze the butter and grate it into the dough. I don't use a food processor, though. Determination is often like a diamond. It takes time and patience for perfection. Great video. I'm glad I found your page. I always cooked for a large crowd. It can be challenging yet so rewarding! Your story of foster care and adoption is inspiring.

I have made a few pies in my 55 cooking years. I've made over a thousand pies , and taught pie making....and I would say too much flour. That is what is making the crust split. And you must flip the crust over while rolling it out. That helps meld the crust (fibers??, or actually gluten)together on both sides. Also using that gorgeous rolling pin to roll the crust onto it will actually help transport the crust to the pan. I hardly ever use butter, I use Crisco ,but walmart brand works just as good. I use vegetable shortning. BUT...my grandma , who taught me in the mid 60's only used the lard she rendered. My recipe is for a 2 crust is... 2/3 cup + 2 rounded tablespoons of shortning. 2 cups AP flour + some for rollong out, and 1 teaspoon of salt. Use pastry cutter, or pulse in food processor to PEA stage. Use ICE water. 4 to 9 tables. Fact... depending on the dryness of the flour, where you live, dry desert, humidity , will govern how much ice water you need. I always start with 4 tablespoons and add more as needed. You want it on the softer side, because as you roll it and flip it over, and add a small amount of bench flour each flip, it is a good time to add more flour if needed. When my top crust is on, and i have pinched the sides with my fingers, I cut a couple of slits or breathing marks in the top, then I brush a small amount of milk on top and then dust with sugar. Could use egg wash or a cinnamon sugar mix. I am going to make a video because everyone wants to see how i do it. Guess i need to start with making a utube channel. I LEARNED A LOT from your chicken pot pie. Steps I've never used. Guess im making it your way this week. THANKS FOR THE GREAT LESSON. A d hubby is 100% correct, what matters is the flavor, and I'm sure, that chicken pot pie you made was the bomb!!!

This the first time seeing you cook. You,are so cool and down to earth. I always fight with my crusts also. I’m 81 years young. So don’t worry be happy. I use. Butter flavored Crisco. Which I keep in the fridge all the time. I’m along with the cold butter.So I do have better luck. I agree with your family. It’s better that it taste better than it looks/

Years ago, when I was very, very young.Crisco had the recipe on the back of their label. 3 cups Crisco, chilled 1 tsp salt 1 cup Crisco or 1/2 cup Crisco and 1/2 butter, chilled. 1/2 cup + 3Tblsps ice water I add 1 Tblsp white vinegar or vodka helps to make it flakey. Not in recipe. My opinion you might have needed more water, depends on the day. Humidity and flour has alot to do with it. If your house was dry whether it was raining or dry outside.

Heather I think a roux is just your choice of fat, oil, butter and flour.... Once you add cream you now have a bechamel sauce... There are 4 tablespoons in a 1/4 cup... My husband came in just as you were showing the finished Potpie and he wanted to know what kind of pie because he thought it looked great. I asked if he would like something like this and he said " Who wouldn't want something like that" Now I'm on the hook for a homemade Chicken Potpie...

Try using parchment paper at the bottom & top when you're rolling your dough it's so much easier when transferring over to your dutcpan ❤looks delicious

I bet your chicken pot pie tasted amazing! It looked absolutely delicious! I am pretty sure it was your shortening as it needs to be cold, to make the best crust. I have found that it works best! Your apple pie is so pretty and looks delicious as well! Now I might need to make one too! I also get nervous cooking when anyone is watching me!

I get so stressed out when you over fill that pan, I'm screaming at the screen, "don't do it girl!" lol. I've been meaning to make chicken pot pie for so long and have never done it. You inspired me to add this to next month's meal plan. I'm all about doing a big prep day once a month so I think I might try making the filling and freezing it, that way I only have to fool around with the crust on the day of.
