Summary: Koobi is salted tilapia used in most Ghanaian savory dishes such as dips, stews, soups, etc, to attain an umami taste. It is similar in taste to shrimp paste, and fish sauce. Salting and drying are both preservation methods used in the production of koobi and therefore, it stores well in the freezer or at room temperature.
Ingredients:
* 6 medium size tilapia scaled, gutted, fins and gills left intact
* 2 pounds coarse sea salt

Wow! This felt so nostalgic. As a Chinese person, we have similar salted fish in our culture as well and I remember when my mom would make white rice porridge and serve it with the dried, salted fish.

Can this be achieved indoors for those of us living in colder wet climates and without much sun - Seattle, using an oven?

Yes, at room temperature, 80 - 85 Degrees Fahrenheit. Must be kept in a dry environment as well. It will take perhaps 2-3 weeks to cure perfectly this way.

I’ll avoid the dehydrator in this preparation. In the absence of the sun, I recommend rather air drying. Thank you 🙏🏿

@@NanaabasKitchen Hello just discovered you, thank you for this!! I can't leave outside because of animals...can I leave it out in the day and bring inside at night? And repeat. If i can, should I leave it inside in a cooler area or warm spot? (I live in a downtown Canadian city) Thank you! ...or can I dehydrate in oven?
