Hilarious that you made this now, I was just remembering shrimp toast 2 days ago, and just discussed it with some girlfriends at lunch! 40 years ago, I worked at a Chinese restaurant and we served this. The way they made it there, was to spread the paste on the bread, sprinkle with the sesame seeds, cut each piece of bread into 4 smaller triangles, wrapped and froze them. When we got an order, it’d be dropped frozen right into the deep fryer; customers LOVED it. We’d have to make fresh batches (usually one large loaf of bread) every 2-3 days.

I've seen my mum making hundreds sesame prawn toast, since we owned a Chinese takeaway. Cheap supermarket brand sliced bread, topped with prawn paste stretched out with cornstarch + liquid (some naughty takeaways will stretch it by adding pork mince). Slam the bread paste side down in a tray of sesame. Do two cuts and make 4 triangles. Freeze. Fry as required. I suspect it'll work in air fryer after being frozen.

Just a comment about grilling in the airfryer, I do grilled cheese on toast as well as toasted melted cheese sandwiches. I actually part-toast the bread first before putting it in the airfryer, otherwise it comes out a bit soggy in the middle. My favourite prawn toast ever comes from our favourite Chinese in Queensway, Bognor, where they put a lovely thick wedge of prawn filling. It comes out juicy and lush - oh, and they don't 'adulterate' it with onion, ginger or anything else. All you can taste is prawn - and the sesame seed 'crust'. Just divine.

We currently get the pre-made toasts and reheat them on the air fryer so I'm not surprised they work when made from scratch too. 😊 I'm now going to finish off my leftover prawn toast. 😂

Word of warning especially to Australians: There is a species of prawn called the Red Royal prawn that is often sold as raw prawn meat which has red veins when raw instead of grey ones. We used to have a big problem when we first started getting them in at work where customers bought the packs thinking they were cooked, to the point we had to put a warning on the freezer to make sure people didn't try to eat raw prawns.

According to Google, prawn toast is a Cantonese dish from Hong Kong (which is where most British Chinese food originates). Chinese food can be quite varied, so it's possible that in the US your Chinese food has influences from a different part of China. I've also heard that a lot of American Chinese food was actually invented in the US (some of which has made its way over the pond).

"The oven looks more fried than the air fryer" that's because an air fryer is 100% just a small countertop electric convection oven. It has more concentrated convection because of the size, but it is 100% a standard radiant fan oven made to sit on the counter with really good branding/marketing.

My local Chinese takeaway puts four whole prawns on each corner of the bread when they cook it. I don't think anyone has ever told them they are supposed to mash it up, it does mean when cut on a diagonal though depending on what orientation the prawns were placed in you either get like one whole prawn and two little tail bits up to sometimes three almost whole prawns when you get the two fatter ends 🤣
