Yummy Chicken Lo Mein
Preparation Time: 15 min
Cooking Time: 15 min (approx.)
Serving: 4-5 people
Ingredients:
1. Lo Mein (egg noodles) 283g (10 oz).
2. Sliced chicken breast pieces 1 cup.
3. Julienne cut carrots ½ cup
4. Chopped garlic 2 Tbsp.
5. Chopped +sliced ginger 1 Tbsp + a few.
6. Spring onion 1 sprig.
7. Oil 2 Tbsp
8. Green chilies 3-4 pcs.
9. Salt 1 Tbsp
For the Sauce
10. Chicken stock 2 cups.
11. Soy sauce 2 Tbsp.
12. Oyster sauce 2 Tbsp
13. Tomato ketchup 1 Tbsp.
14. Sriracha (chili) sauce ½ Tbsp.
15. Sugar ½ Tbsp
Procedure:
16. * Lo Mein and Chow Mein differ slightly in their cooking process. Chow Mein is mainly stir-fried noodles with meat and veggies and less sauce. On the other hand, Lo Mein is usually cooked with Bok choy and other veggies with a large amount of sauce.
17. Boil the noodles according to the instructions of the packet. Put it in a strainer to drain out the water.
18. For the sauce, take 2 cups of chicken stock. Add soy sauce, oyster sauce, tomato ketchup, and the ingredients for the sauce and mix well. Set it aside.
19. In a pan, heat 2 Tbsp of oil.
20. Add chopped garlic. Add chopped and sliced ginger. Sauté for a few seconds.
21. Add the chicken pieces. Cook for 1-2 min on medium-high heat.
22. Add the carrots and the white part of the spring onion.
23. We are not using any Bok choy today. You can add some slit and deseeded green chilies.
24. Add the sauce. Before adding stir nicely. Let it come to a boil.
25. Add the noodles. Stir quickly to mix everything well.
26. Turn off the heat. Sprinkle the green part of the spring onion.
27. Cover and give it a 2-minute standing time.
