Look at the flat iron griddles that they use for eggs in well-run cafes. They are black cast iron too, but with an optically flat surface. Maybe the polishing phase could go even further, even flatter?

Just a piece of advice. Don't Crack your egg on the side of your pan use your flat countertop. You end up with egg on the side of your. Not being critical just passing on what I've learned.

I've seasoned a few cast iron pans over the years. The ultimate process is an extremely thin coat of PURE flaxseed oil. If it's not refrigerated at the store it's the wrong flaxseed oil. Read the label, some flaxseed oils have additives, you don't want those. After the micro coat of oil on all surfaces of the pan (top, bottom sides and handle) put in a cold over and preheat to 475-500 degrees. Once up to temp bake pan for one hour. Let pan cool in oven about 2-3 hours. Repeat this process six times. It'll take a few days to do but the process is surprisingly easy and kinda fun. When you're finished you'll have bullet proof coating that only gets better with age. I've tried other methods but this is far superior to any others. Edit: make sure you place the pan upside down in the oven when seasoning so the oil doesn't pool

I will give this a try thanks for the ultimate process formula. I just got my first iron skillet yesterday this is going to be fun. A few years back I was on vacation In Homer my wife and I cooked on cast iron at the house we rented and we marveled at how well the food tasted.

Flaxseed is actually one of the worst oils to use for seasoning, but gathered a cult-like following due to one blog entry with faulty science. Use canola or soybean for best results!

I've done this many times. Flaxseed is the one oil that flakes off and I've re-seasoned the pan from scratch several times. The smoke point is too low with flax seed. Any oil will work just the same or better. Best success I've had, same success as in this video, is avocado oil. Flaxseed was hyped to the point of pure BS.

Just grapeseed oil after every use and don't need any more oil or butter. Or maybe mine is just that we'll seasoned. I just heat my cast iron and cook. It's always non stick

Metal can scratch the seasoning. I personally just broke down and bought a rubber spatula.

Metal is good to use because it helps smooth it out. You don’t wanna dig into the skillet of course but using a metal spatula like he’s doing is fine. I use a stiffer one than he’s using but I like that flexible one so may get me one.
