Today I am making delicious enchiladas suizas for dinner. These are chicken enchiladas smothered in a tomatillo salsa cream sauce with melted cheese. The recipe is simple, easy and delicious!

I haven't had these for so long! I used to eat them every day as a teenager bc I worked as a hostess in a waterfront Mexican restaurant. So one free meal per shift. Now, I can make them myself.

I've made enchiladas suizas several times and I honestly can't stomach it. The tomatillos always have an acidic and unappealing taste. I've heard baking soda helps but still tastes bad to me. So tomatillos are not for everyone.

Looks amazing! I did not have any tomatillos nor a blender so I took a skillet and buttered it and then I made my own sauce with Herdez Cilantro Lime (the whole jar ) and salsa verde jar mild (1 cup) and 1.5 cup of sour cream and added salt, pepper, onion powder and onion and cilantro let sauce simmer on low and it was UTTER PERFECTION! Ty for recipe!! I squeezed lime on the chicken as well It was BOMB! Thank you!

Angelica those look fantastic. Years ago when we lived in Los Angeles a sweet lady made these up to sell in my husband's downtown office. He would bring them home to me and tell me he had "Enchilada Susies". 😃
