Rhubarb Jam with Oranges
2 1/2 lbs rhubarb
1 1/2 lbs sugar
1/2 c water
2 oranges (rind and juice)
Wash rhubarb and cut into small pieces.
Add sugar and water.
Grate rind of oranges and add to rhubarb.
Add orange juice and cook for 30 mins, stirring occasionally.
Water bath method for canning:
fill hot jars to 1/4 in headspace.
make sure to debubble and wipe lip clean.
Add lid and ring, close to fingertip tight.
Can for 10 mins, turn off heat, let cool for 5 mins.
Remove jars to a draft-free place. Let cool overnight.
