In this video you will learn EVERYTHING about BOBA aka Tapioca Pearls and how to Cook a Large Batch of it for an award winning Bubble Tea Shop or Cafe with my recipe.
This is a long awaited & anticipated video! I hope I've been able to cover everything about storing, cooking and flavoring these amazing Boba Pearls for you! If you have any more questions, drop a comment below and I'll do my best to help you out!
Directions:
❤️ 700 Grams Restaurant Quality 'Grade A' Tapioca Pearls (USA 1.5 pounds)
❤️ 6 Liters Boiling Water (USA 1.5 gallons)
❤️ Cook for 30-minutes - stirring halfway through
❤️ Turn off the heat completely and allow everything to rest for an additional 15-minutes
❤️ Rinse it for 1-2 minutes in a sieve with cold water until the water runs clear.
❤️ Add my special "boba solution": stir together 4 ounces of Longan Honey Syrup + 1 Cup of Brown Sugar + 500ml Hot Water. (USA 17 ounces of hot water)
❤️ Use this solution ratio for every batch of 700 Grams of Cooked/Cleaned Boba.
❤️ Let the Pearls soak up the solution about 15-minutes before adding them to you drink.
❤️ Enjoy!

@@mybuddyroland4968 My shops were in the UK so I enjoyed using the brand 'Boba Box UK', but there are so many different suppliers out there and each one is slightly different. Never hurts to try as many bobas as possible before you commit. 🤣

Thank you for sharing your insight, I actually cooked my bobas the way you explained (15 min, stir, 15 min, rest 15 min) it was on the stove but I have never had such perfect texture. I was sure my bobas were bad quality, turns out my cooking was at fault 😅 thank you again !

Hello Cyril, Yes I did events and popups. Everything is the same, but at least one day (or more) of prep for everything 😅 Just do everything at a larger scale, keep it refrigerated, etc... Boba is tricky. Ideally needs to be made on site, numerous boba cookers, one staff just dedicated to making boba at large events. 😅 Small events it can be made in advance and kept warm. I sold all my shops and businesses now so I don't foresee myself making a video about it all any time soon, but perhaps I can tag along with one of my clients in the future and release that as a video.😉😇 Good luck!!!

My home made boba pearls always end up getting hard after my first use shortly after cooking. Now I know why. I've been using the 5 minute quick boba balls, no wonder they get so chewy!! 😩😩😩😩 You're a life saver. Definitely will try out the longer cooking one.

You're welcome Anya, glad it was useful 😇. If you don't have a small rice cooker to keep it insulated, and with the option to be able to warm it slightly during the day, it is no problem. Especially if you live in a warm climate, you can simply serve it out of whatever container you want and it will be fine. I grew up in Southern California and Boba was always just stored out because the temperature was so hot and everyone hard. However in the UK it is cold throughout the year in comparison. The place where I currently live doesn't get above 20° c in the summer. 😂 Also perhaps in the winter your location might become cold also. The idea is just to make sure that the boba doesn't go hard. But if you don't have this issue then I wouldn't worry about it. 👏🏼🧋☺️

Nice vid. Cooked starches change their structure after refrigeration. They are never the same again (tougher). They are even absorbed into your blood steam slower and have a lower glycemic index. A consideration for diabetics and those observing a ketogenic diet.

For foodsafe purposes what temperature do you hold your boba at throughout the day. I'm thinking the 4 hour industry standard is likely linked to bacteria prevention?? Hi Daniel, I'm excited for you to start your own shop! I hope it will be a fun experience 😁 The 'industry 4-hours' thing is not only because of potential bacteria growth, but also the boba will either go hard, or become all gooey and gross. If someone doesn't know, they won't taste the difference... but for the connoisseur and major fans... if you keep the boba too long, you'll hear about it from them via complaints. Here's a funny story: After I sold my shop, the owner had new staff, etc. I went in once to get a drink and i noticed the boba didn't seem flavored at all with the solution. I politely mentioned to the new owner later about this and they inquired into who was on that day. Come to find out that staff member was putting new cooked boba in with the old cooked boba... and not even changing the solution or adding new! 😩 First off that's not hygienic in this type of scenario, as it was the end of the day so who knows how long the old boba was there for, but second, obviously you're getting delicious new pearls... with old!? And lastly, because there's no new solution, the new boba had no flavor to absorb and tasted plain.😂😂😂 Hope that helps!

I love your teaching. my ONLY concern is contamination from the sink when you first pour into the strainer. The level in the sink looks to meet the boba in the strainer, and that is a disaster if there is ANY contaminants in the sink (and most home sinks are filthy even after being cleaned). I suggest placing the strainer on an upside-down dish to raise it above the bottom of the sink. This goes for anything you are straining. Fruits, pasta, boba....careful of cross-contamination! :-)

​@Nihal Gaming I did watch it, and I went and rewatched it just now, and if you look, the level of the liquid in the sink is so high it reaches past the curve of the bottom of the colander/strainer, which increases chance of cross-contamination. I posted something positive with a safety concern. I didn't judge or disparage the channel or the author. You should try that sometime.

Kristin, can you do a video of how to set up for an event? How do you store ice at a day market (would buying bag ice and storing in a plastic cooler okay and just scooping it out to serve), how to set up with just one table at a day market etc

I've made a note for part of a future video idea. But yes, you can easily store ice in coolers. This is done all the time by street vendors in places like Thailand. You'll just use a different type of ice than square... More like pellets is easier for this, and just pour the drink over the ice in the cup. No need for a sealing machine in this case, just a simple lid with a hole and straw, or even a sipper lid if no toppings. Hope that makes sense. 👍🏻

So glad you made this awesome video. Thank you VERY much. Regarding your rice cooker to cook boba. Usually a rice cooker automatically switch to warm as soon as it is completed. So I assume you click “cook” for that first 30 mins for water to boil and after it boils, you click “cook” AGAIN to keep it cooking for 30 mins? Am i correct? Lastly, I store my boba in an air tight container, but for some reason moisture is form on the side of the walls, Then I try sealing it in a bag then put it in a airtight container, STILL moister now builds up on the seal bag. What am I doing wrong?

Hiya - You're very welcome :) Glad you appreciate the video! 😍 1.) Rice Cooker - so with this HUGE industrial grade one, it doesn't automatically switch to warm. But I do know what you mean, as my small home rice cooker does do that. The large one for the shops that you see in the video, it will stay on cook, even after the water is boiling. It will only switch to warm if we switch it manually. Not sure why exactly, but it was this way for all the different brands we used/tried out over the years. 2.) I think I understand what you're talking about regarding the uncooked Boba. Basically when you open the bag and you transfer it into a different container, you are getting a lot of humidity? Can I ask how long you are leaving it in these other containers and what size containers you are using? If it is a large container you are pouring the uncooked boba into, there will be a greater risk for a lot of condensation. But if you put it all into many smaller containers it is less likely. to have this condensation problem. The other thing I would do is: inside each giant bag of Boba there is a 'dehumidifier little baggie tablet' type thing. You can save those overtime and then put them into the divided containers and that will prevent any moisture buildup. But just make sure you and your staff remember to remove those dehumidifier tablets before you cook the Boba!

Thank you! 🤩 The supplier of the pearls was a Taiwanese brand called Chainly... but they're wholesale to middle-man distributors only. (I don't think you can buy direct). However any bubble tea middle-man supplier should be offering Grade-A pearls. If they don't... I would second guess the rest of their products...

Hello 👋🏼 thanks 😇 They're actually Bar Mats. They come in different size, shapes and colors. I found the black color to be the best option over the years 👍🏼 Easiest to clean and doesn't stain from the tea.

I searched the comments and I'll copy and paste: If I recall correctly, it's the Buffalo Commercial Rice Cooker: rice capacity 10 ltr cooked / 4.2 ltr dry. Around £89 online. Hi, Thank you for the kind comment. 😍 The brand I usually used I think was Buffalo. But if you search for 'Commercial Rice Cooker' you'll find plenty of similar options online. The size I think was 25-30 cup dry. This means, if you were making rice in it, you'd put 20 cups of rice and fill water all the way to the matching line. (I think) But I know for sure, mine would comfortably fill with 6-Liters of water up to the '20-line' and then I'd put in 700grams of the uncooked Tapioca Pearls, as seen in the video. This allowed for plenty of space still at the top for everything to expand and it wouldn't cook over that way. Hope that helps!

Long shot question here, but I own a boba tea shop in Australia and usually use an induction cooker to prepare grade A pearls from Taiwan. Now that two years have passed this was uploaded, I wanted to know if those new pearl cooking machines would do the job now in hopes of cutting down on cooking time or electricity consumption whilst also retaining its quality. Hello 👋🏼 I've had some clients using the new 'boba cookers'. They're just rice cookers converted with tapioca names... but not even like "braise"?! 😅 The thing is, It's a really dependent upon how much you are making every day and what size batches you are doing. A large hob container or large rice cooker will yield more than a small or regular size Boba cooker. Worth getting one you can return if you don't like it... giving it a try, and see. Doesn't hurt. As for amount of electricity used... the ice machine and fridge are the real chuggers. Also the hot water boilers and heating/AC units. Not really an electric hob tbh I wouldn't think... but I'm not an electrician. 🤣🤣🤣 Let us know either way!!!

Hello Kattia, Thanks for the comment.😎 In the description of the video it gives more exact details of the process. In the UK, we don't measure weight of an item by volume, but usually by weight itself. So in this video, I'm measuring out 700 grams worth to 6 litres of water. But again, the info is in the description of the video so you can copy and use it for your notes hopefully. 😇 Good luck 🤞🏼

Especially when you consider that you are recommending one specific brand/type of boba, and others may be heavier or lighter by volume. We use cups and gallons, teaspoons & tablespoons, etc. in the US; anytime you are able to provide the corresponding measurement for both regions (UK/US) in your videos, your audience will likely appreciate that they don't have to look up the info elsewhere!
