The Recipe:
2 Pie Crusts
3.5 pounds sweet potatoes
3 eggs
1/4 cup Self-Rising Flour
1/4 cup buttermilk
1.5 cups sugar
1/2 stick melted butter
2 Tbsp lemon juice
1 Tsp lemon extract
2 Tsp Vanilla extract
1.5 Tsp Cinnamon
1 Tsp Nutmeg
Clean and Boil sweet potatoes until very soft. Allow to cool to the touch.
Preheat Oven to 300 Fahrenheit. Peel sweet potatoes and place in large bowl. Add remaining ingredients. Mix well. Pour into pie crusts sprinkled with sugar. Bake 2.5 hours. Increase oven temperature to 325 Fahrenheit, bake 30 more minutes. Remove from oven. Allow to cool thoroughly. Enjoy.
