An influential figure in Turkish sourdough Mr. Hakan Doğan, the owner and artisan of the famous bakery Pasto. He has traveled throughout Turkey three times and found 85 different types of traditional sourdough. He analyzes their DNA and works to pass on Turkish sourdough onto the following generations for 500 years later.
At his own store, Pasto, he uses 12 types of sourdough to make a wide variety of bread. For example, there is a bread made from sourdough found in Gümüşane in Çiçekli that is about two centuries old.
The store also offers a wide variety of small prepared bread such as Borek and a variety of side dishes that go well with the bread. And It is also particularly popular among the Arab tourists.
Hakan Doğan continues to give lectures and seminars on bread at many kindergartens, vocational high schools, and universities and is a member of the Danedolu platform, which has been conducting research on sourdough in Europe and the Middle East since 2014. He is also the author of two books on sourdough bread and pastries that won the International Gourmet Award.

The annual bread consumption per capita was recognized as a Guinness World Record in 2000 with 199.6 kg per capita per year.
2. Turkey is considered to be one of the birthplaces of bread.
The ancient Mesopotamian civilization gave birth to bread. Southeastern Turkey is part of that civilization.

For those who don't know, Sourdough is prodigiously more healthy than normal bread because it breaks down sugars, carbohydrates and fibers that the human digestive-system doesn't have the capacity to do. Sadly, "white" flour was a luxury in old times so with industrialisation white bread was embraced everywhere despite being horrendous in terms of nutrition. So my highest respects to those who never faltered and always kept the old traditions alive.

Dear Hakan Dogan, I will be traveling in Turkey next April 2024. Your Pasto bakery looks incredible. YOur sourdough breads seem to be very special. I am looking for Karahoyuk ekmegi made with the chickpea yeast. Can you help me find this bread tradition? I will write articles about this bread tradition to preserve and educate people around the world about the fabulous flavor of chickpea-raised bread. Unfortunately I am very sorry to say that majority of the bread produced and consumed in Turkey is very low standard, they use cheapest flour and lots of dough improvers. As a Turk and self thought bread connoisseur, it is difficult for me trust if someone is selling a sourdough bread without contaminating with commercial yeast (knowingly or unknowingly) it is not only bread, just about everything somehow faked or not done properly. May be it is because Turkeys of harsh economical realities or lack of universal ethics. Of course there are very small number of boutique bakeries which are serving for the upper middle classes but ordinary Turk would never afford to their products.

Bread does not have to be expensive to be good. Price point is always essential with bread it is the food of the people, in US a sourdough loaf is 7-15 $ no ordinary person can afford that daily. Reheated Turkish milk bread burn the crust a-bit with Dodoni feta and olive oil and a garden tomato is the stuff of gods.
