When using foam pans such as a Schluter Kerdi tray or a TileRedi (Ready Your Way) pan, the sub-floor needs to be flat and level before the foam pan is installed. If the floor is more than 3/16" out of level or flatness, additional sub-floor preparation will be needed. There are a few ways of doing this preparation, one of which is using Self Leveling Underlayment (SLU) such as Custom Building Products Level Quick RS. There is a video link on how to do that below. The advantage to using Self Leveling Underlayment is that is is relatively easy to do, and doesn't require as much skill as a mortar bed. The downsides to it are that it's expensive, it requires foam dams along the perimeter so the leveler doesn't pour out of the area, and it takes 4 hours before you can walk on it or install the foam pan on it.
The rapid setting mortar method is half of the cost of Self Leveling Underlayment, does not require foam dams, and can be walked on in about 15-20 minutes so the foam pan can be installed much quicker.
