Just like with Adachie's cabbages his thing for pancakes is mostly a meme that spawned from a few scenes.

tbh its understandable considering it's exactly what fucked up his plan in the first place. Morgana is the one who mentions the word, and Morgana can only be heard by people who went into the Metaverse at least once. Akechi made it clear that he heard Morgana at the time (after Madarame's Palace) by asking about the pancakes (well, Morgana mentioned a "pancake-looking thing" rather than actual pancakes) that Morgana mentioned. Later, during Sae's Palace, Akechi also mentioned that he discovered the Metaverse two months prior, which is a flat out lie due to him showing in the pancake scene that he discovered the Metaverse earlier than that. Considering his initial antagonistic behavior towards the thieves and his inconsistent alibi during Sae's Palace the Phantom Thieves deduced Akechi was full of shit and made their backup plan. imagine being a detective and a professional Metaverse assassin who's worked in it for at least two years (Futaba's mother died two years before the game's events and it's Akechi who killed her), only for your scheme to be ruined just by mentioning talk about pancakes out of all the things that you overheard from someone who happened to only be heard by people who went into the Metaverse at least once.
