Excellent information. I went to school half a century ago, back when Home Economics was still taught to all of the girls. Even back then we weren’t taught that much about proper food storage. It’s kind of sad, when you think about it. I have done something with food almost every day since then, and I still haven’t used algebra.

I was watching the NYS Gov speak today about the weather crisis we are having. All she did was talk about the snowplows. She didn't say one word about downed power lines, lack of electricity. She and others want us all to go electric everything. Glad I started emptying out my freezer for canning. Also, no one is going to take my gas stove. When we had 4 feet of snow a few years ago, my gas stove was my main source of heat. I filled my canners with water and heated them on the stove. Then I just let the heat from the hot water radiate into the kitchen.

We in the Uk only put eggs in the fridge if we cooked them or washed them. Our eggs come unwashed 😊

I have a plastic dish pan in my refrigerator. I put all my meats in there so it doesn't leak everywhere. Then if it does leak, I just wash the dish pan out and use it again. I've done this for quite a few years now. It's saved me so many times from a massive cleanup!!!

Excellent advice. May I add that I have found that block cheeses stay good in the refrigerator for many months if I keep them vacuum-sealed. Any kind of cheese, and even cream cheese, lasts.

Flip your eggs over in the container so that the wider part is facing up. (The air bubble is in the fatter part, keep it on top)

Regular cleaning tip. I divided my kitchen into 4 parts. I clean an inventory 1 section each week. Once a quarter there's an extra week to work on my food storage.

One thing I learned from my son (a chef) is that restaurants use ozone water to clean their fruit and veg before storing it, to extend its life. A home ozone generator off Amazon cost about $45 five years ago, and it’s just a little gadget with an air tube (like a Foodsaver lid sealer) with a ceramic ball on the end. It cannot be used safely indoors (ozone is what kills people sometimes in a lightning strike!) but in a ventilated area like a porch. I take a gallon of clean water, put it outside and treat it with ozone for 20 mins. Then immediately put all the produce into the water and slosh it around a bit then dry thoroughly and stash in the crisper drawers. The ozone kills bacteria and viruses and funguses (don’t use it if you’re fermenting) that cause spoilage. I find it very useful in the summer to buy time until I have harvested enough cukes to make my pickles. I have been very pleased with this and it has saved me a lot of money. The only time I toss out spoiled produce is when I forget or get lazy. Ozone treated water (you cannot store it-the added oxygen molecule dissipates) is said to be very good for SIBO and other health issues. You can find videos here on YT about it.

I thaw myturkey ona big platter. I use my crisper drawers for lunch meat and cheese, I use a shelf for veggies so I can see what I have, and containers of the pre cut veggies ( I cut them).

One thing you can do with some spices that everyone buys dried. Oregano, sage, thyme, things like that, is mix up your favorite blends and add them to a small bottle of olive oil and give as gifts. It's a good way to use up those spices that have been hanging out in the cupboard for a while. Extends the flavor and is great for things like Italian bread or rolls, pizza dough, tortilla dough, so many things. A question Leisa, have you ever heard of storing eggs in barley? Farm fresh but layered in barley and the video said good for at least 6 months. I have not heard of that one before?

Stay safe up there as the big nasty storm comes thru Michigan! We're gonna try not to get blown away here in northern Macomb county, we're ready to go. We've got the generator, the camping lanterns, I'm making a fresh pot of chicken soup and another of chili to microwave the next few days. All we need to do is sneeze on our power lines around here, and it takes a while to repair them when the weather continues to suck.

I'm currently re-certifying my food safety manager course, and yes, this info is up to date. Except, lol, it's Negative 18ºC = 0ºF. I know, lots of notes to read. You should see the chapter on safe cooking temperatures.

Found 10 yr old vacuum sealed ground venison in my freezer. Decided to thaw it out and cook it up and see if it was ok. It was perfect! I was amazed but thrilled. Was kept below 0(f). So always check before you chuck!

Extra fridge in pantry mainly has non-perishable drinks. During heavy harvest, I set it a little warmer & put unwashed produce in to prevent produce from freezing.

I take apart and clean inside of the fridge every 2 weeks and look at all the labels with the condiments. I have to say that we dont have much in the fridge going all the time. Milk, juice, condiments, lettuce, cheese and leftovers. We are more reliant on dry pantry and freezer. I use white blank office labels pack of 100 for $1.00 from dollar store for labeling all my freezer items and jars, whether canned jars, dry good jars or herbs. Love my cheap stickers!

We bought a new fridge because my hubby wanted a bottom freezer. I didn't realize that I can't even reach the top shelf so we lost fridge space but mu hubby gained the job of cleaning it.

Remember to go through church kitchens too! I’ve found some scary things that were being put out at potlucks. Warning: if you throw out VERY expired dairy products and moldy condiments, some people will actually be upset with you, lol.

I used to manage a church kitchen with a commercial kitchen, and I tell you people would bring stuff from the backs of their fridges at home to serve at church. Somehow not wasting food is part of religion, they would rather poison fellow churchgoers than throw out nasty food. Ugh.

I said toss it, another lady grabbed it, shook it up, said no one will know, and put it on the table! 🤮I learned it’s best to help with meals if you’ll be eating there so you know what to stay away from. 🙄

We don't use a lot of mayonnaise, so I write the date on the top of the lid, when I open it. This way I know how long it's been in the fridge, when I go to use it again. And I try to keep an extra jar on hand in my backups. It's a shame that the bigger jars are cheaper than the smaller jars, because I feel like I am throwing a lot away at times.

Hi Leisa, this is so important. I agree with you about those crisper drawers. I don't think that they are big enough for my vegetables. I mean, a 5 pound bag of carrots fills one drawer. I got into my freezer and got a bunch more room because I had 2 bags of corn and that is waiting for me to make and can vegetable soup. Between the corn and the beans that'll make a complete protein so if we don't have or want meat we still have the same nutrition. We aren't inclined to go meatless often but it does leave us that option.

We homeschooled our sons. Hubby was frequently doing some weird experiments with them. I’d come home from the grocery one day to find none of the guys around and a bowl of the most creepy colored, sort of mottled grey, thick something setting at the back of the cabinet very slowly bubbling. When hubby came in a few minutes later I immediately asked him what the heck that was. He told me with a grin “beats me, you tell me….it was at the back of the fridge and it was bubbling like that when I found it.” Gag! And why didn’t he immediately take it far outside and dispose of it (we lived way out in the country). Why, he was saving it for me to see too any now he was waiting to see if something live would crawl out of it. Men!

Tuesday is my clean out the fridge day. I did the condiment cleanout a week before Thanksgiving. Goodness that was bad! And, you are right, a lot of the stuff wasn't old. But, already expired. Such a waste.

Do you want to blow "some" peoples mind, ask them how long things are good in a fridge after you open them! No one ever talks about it, if you look into it, you may rethink some things in your fridge - just saying. That restaurant supply tub of mayo might seem like a good buy, but if your not using it a lot you can make people really sick. A added tip for seafood, get a tray/plate put ice on it and wrap in cling film and then place seafood (in a container) on that in your fridge. Love when you share these tips 🥂

When canning meat how large of a boneless piece can you put in the jar? I have read keep them less than 1 inch cubes but I've seen videos where the pieces are significantly larger.
