Welcome to the Canuary Collaboration Series for 2024! Each day of this month a channel will post a canning video. When you engage in these videos by posting a comment, you will be entered into a drawing to win some fabulous prizes from @forjars and @SuttonsDaze A list of all the channels and dates is provided below, along with a summary of the recipe I used in this video ♥
🥫Caramelizing Onions: Heat olive oil and cook a mix of red and white onions until caramelized (30-45 minutes).
🥫Preparing Sauce: Add smashed garlic and cook briefly. Combine three quarts of tomato sauce, ancho chili peppers, spices (salt, cumin, chili powder, smoked paprika), ½ cup brown sugar, and ¼ cup liquid aminos or soy sauce.
🥫Blending: Blend the sauce in batches until smooth using a blender or food processor.
🥫Simmering: Bring the sauce to a boil, then simmer for 30 minutes to 1 hour to thicken.
🥫Canning: Fill sterilized jars with the sauce, leaving a ½ inch headspace. Clean jar rims, seal with Four Jars Canning Lids. Pressure can for 50 minutes at 10 lbs pressure.

I love watching your videos. Thanks for taking the time to make them. I have been canning for as long as I can remember. My Grandmother, mom and Aunts would get together and do huge batches of stuff. Now it is just me canning.

I've had a pressure canner for years but never used it until 2 years ago. But once I got started I really enjoyed it and have canned a lot for a 70+ year old broken down old fat man who lives alone. But I share with my brother, sister, daughters and their families along with a few other relatives and friends.

I have several jars of canned whole tomatoes that are not getting used. I’ll have to figure out if I can start using them for things like this! We use a lot of tomato sauce and I’ve never tried homemade enchilada sauce, but now I want to!! Thanks for the inspiration

These collab videos are so inspiring. I'm always learning new things even though I'm 78 and have been canning most of my life. I discovered ForJars lids a few years ago and have not had any failures yet. It's nice to have a reliable company looking out for us canners.

Oh my goodness!! I use enchilada sauce in so many recipes. Why did I never think about making it myself?! This looks so darn good. There’s an old Rachel Ray recipe for a Mexican lasagna that is a family staple for us. Gonna be using this in it as soon as I make us some. Thank you for making these amazing videos.

This is a good opportunity for newbies to not only learn to can before harvest season, but dial in those recipes to your liking. I like using store bought tomato sauce when trying new specialty sauce recipes that I’m not sure my family will like. This way my precious home canned tomatoes aren’t wasted if they hate the sauce! You can make just enough for a meal or two just to try it out, then once you have it where you like it, can up a big batch to have on hand. This is a great way to pass the time on those cold, dreary winter days.

You gave great directions for using the different jars off your shelf, which is great. This is the first year I’ve pressure canned. And haven’t canned in over 40 years and am really enjoying these type of videos. I watch your channel quite frequently because you cook and eat like we do.

I love Mexican food. I grew up next door to a woman from Mexico who ran a Mexican restaurant in a small town near us. The sauces she made were wonderful. I will try this in her memory.

I like that you used your own tomato sauce that you canned at an earlier time to make this recipe. It's a fantastic idea to make more of that when you have an over-abundance of tomatoes in the garden.

I made enchilada sauce last month! Great to have on the shelf. I found that you can get canned tomato puree (Italian passata) at the store. Most brands are reconstituted tomato sauce but the Centro brand is fresh tomatoes that are crushed, then puréed and finally strained to remove any tomato pieces, skins and seeds. It does not have any fillers. You can use this if you don't have fresh tomatoes or home canned tomato sauce.

I actually got motivated to learn to preserve my harvest from your canning videos in 2022. I bought jars and have a water bath canner I inherited from my Grammy years ago. This is my year to put all of this knowledge to use! All of my supplies have been sitting on a shelf in my grow space begging to be used… so my #1 goal for 2024 was to learn to preserve my harvest. Adding this recipe to my ever growing *Need to Try* recipes for canning. This would be an easy after school snack for teens to pop some taquitos in a dish and pour this enchilada sauce over with cheese and bake for a bit. Thanks for the video!

I received an electric canner for Christmas, and I have been using it since. This is interesting, and it will be so much fun to make. I have never used ancho chilis, so I learned they have a sweet and smoky flavor. Should be delicious. Yours was one of the first channels I found when I started learning to can a little over a year ago. Thanks for all the good info. Want to start canning more sauces and enchilada sauce sounds like a good start.

I really want to start canning i watch a lot of you all doing your canning and homesteading i love all the videos and information so I'm looking forward to start canning and cooking all of the great foods that I see you all cooking so thanks to all of you ladies for sharing with everyone else and encouraging us to start doing it ourselves.

It was watching your videos and Leisa over at Sutton's Daze that gave me the confidence I needed to get started in canning (I was terrified of the pressure canner) and now I am hooked! Nice suggestion to make tomato sauce with all the extra tomatoes from a season and then later use it for other sauces as you stated. I’m definitely going to give this recipe a try. So many viewers have stated how tasty this sauce is. Thanks Rachel for sharing!
