I picked some lovely Trumpet Chanterelle mushrooms, then took them home and made (what I think is called) Crêpe à la forestière
This was also the first chance I got to try out my homemade mushroom knife - here's the video in which I made the knife: • Upcycled Foraging Knife
NB: Although this video describes these mushrooms in some detail, you should not rely on the information here as absolute if you're going out foraging yourself - consult an expert or a reliable field guide and don't eat any wild mushrooms unless you have positively identified them (and ruled out any poisonous lookalikes)

Trumpet chanterelles are actually called funnel chanterelles in Swedish. Worth killing for ... well, not really but they're awfully tasty! :D

I really like how you roll with things when they don't go to plan - I feel like you should teach reaction training or lateral thinking classes haha Love the foraging content (and the WSiaC, and cooking, and ecospheres, and everything else)! I doubt you'll ever see this particular comment but I just wanted to put it out there that you have almost single-handedly gotten me through quarantine, and for that I'm grateful 🍄

Does washing them hurt the mushrooms? I don't eat mushrooms much but I always wash things I'm gonna eat.

Washing them makes the cooking process a little wetter and for some things it means you will need to cook them longer to drive off the extra water, and this could lead to overcooking (although not so much with chanterelles, as they should never be lightly cooked anyway)For many wild foods, it's better just to pick clean ones than to try washing them. Raspberries, for example, are pretty nearly worthless after washing. Unless you're living in an isolation bubble, a little bit of invisible dirt is not going to harm you (in fact, the opposite is true - obsessive hygiene isn't good for the immune system)

Ah ok. I'm definitely not a crazy clean freak but I do wash everything I'm gonna eat almost by habit. How do you know you've cooked the chanterelles long enough? Also, when you say "they should never be lightly cooked anyway" what is in them that is harmful?

Books on the topic just say they can cause stomach upsets in some cases if eaten raw or undercooked. I am not sure of the mechanism.I fry them until they soften (about 7 minutes or so) and I've never had a problem.

Alton Brown of the Food Channel tested how much water was absorbed by store bought mushrooms by leaving some soaking in water for a few minutes as compared to mushrooms he had wiped off. They really didn't soak up much at all. Probably depends on the variety of mushroom. But I wash my mushrooms. I hate biting into something gritty. Alton did dry the mushrooms with paper towels and let them air dry before cooking.

Do they grow in the New Forest? I grew up in Finland and miss these mushrooms and didn't think I would be able to find them wild in the UK.

Hey Mr. Shrimp, it's been a while since you made some mushroom foraging video, but since there's a pandemic on going, mind if you review canned mushrooms and compare it to the taste of fresh ones? That would be cool. Thanks, tho idk if you would be able to read this

I always find them white coated pans awful for sticking they are good for sautéing vegetables, potatoes etc but cooking eggs or pancakes they are not much kop. I’m using a scoville non stick frying pan at the moment and everything just glides on the surface.

I notice you used a plastic utensil for the ceramic pan, but a metal one for the cast iron, are metal implements recommended for cast iron cookware? Would you recommend cast iron cookware, all the 'seasoning' and stuff seems so complicated!

I like cast iron for general cookery. It can cope with metal utensils if they are used carefully. Nonstick is great for eggs, pancakes, etc
