Funny you went to pinot with this. Do you mean more Burgundy or are there also new world regions you´d go to? I was actually thinking more of white wines with this as mushrooms on toast is more of a starter and for that I love Chardonnay from Baden. Saalwächter is stunning! The wine maintains freshness through the relatively cool climate and has good fruit to deal with the spice of garlic and chilli, it´s mildly herbaceous and the high levels of brilliantly integrated diacetyl really sets off the butteriness in this dish.

For sure! Baden wine would also be a great pairing. This is actually part of our full Santa Barbara episode, where we talk Santa Barbara Chard and Pinot, so just synced up with the episode to use Santa Barbara wines. We pair the Chard too with an awesome clam chowder. Definitely check it out if you have time!

@@visforvino Clam chowder with Santa Barbara chardonnay does sound really very good. American wines unfortunately aren´t that readily available in Germany.
