Simple broccoli noodle salad with a tempting curry dressing. This is a salad that not only tastes incredibly delicious, but is also a feast for the eyes and also supports your health. The combination of crunchy vegetables, creamy dressing and spicy cheese makes this salad a real treat for the palate.

Ingredients:
250 g pasta (I used treccine)
Cook the pasta in salted water according to the instructions on the packet until al dente (approx. 8 mins).
500 g broccoli
150 g hard cheese (I use cheddar, vintage)
200 g sour cream (or yogurt)
Approx. ½ tsp pepper
1 tsp salt (I use herb salt)
1 tsp paprika
1.5 - 2 tsp curry
1-2 tsp mustard, medium hot
1-2 tbsp vinegar (I use balsamic vinegar)
1 tbsp oil
1 tsp honey or agave syrup
1 can of corn

The star of our salad is the crisp green broccoli. This superfood is full of healthy nutrients that strengthen your immune system, protect your heart and can even reduce the risk of cancer. We only blanched it briefly so that it retains its bright green color and crunchy bite. This is accompanied by tender pasta - in this case I used treccine - which gives the salad a nice texture and a filling component. Spicy cheddar cubes provide a hearty contrast, giving the salad a special touch with their intense flavor.
The centerpiece of our salad, however, is the creamy, spicy curry dressing. Based on sour cream or yogurt, we refined it with an aromatic mixture of curry, paprika, mustard and a hint of honey. A splash of balsamic vinegar gives the dressing a fruity note and rounds off the taste perfectly.
Finally, we added a can of sweet corn, which gives the salad a pleasant sweetness and additional crunch.
