French Silk Pie for Two | Small Batch Dessert

Smooth, light and delicious this pie get's its name from its silk like consistency.

Ingredients:
Graham Cracker Crust:
2/3 cup graham cracker crumbs
2 Tbsp sugar
2 1/2 Tbsp melted butter
Pie Filling:
1/4 cup butter, salted
1/4 cup plus 2 Tbsp granulated sugar
1 oz. unsweetened baking chocolate
1/2 tsp vanilla
1 egg
Whipped Cream Topping:
1/2 cup heavy whipping cream
1-2 tsp of sugar
1/2 tsp vanilla
Directions:
Graham Cracker Crust:
In a small bowl combine all ingredients and stir until it resembles wet sand.
Press into the bottom of 2 five inch pie tins (see below for link)
Bake at 350 degrees F for 5-7 minutes or until golden brown on the edges.
Remove from oven and cool.
Directions:
Pie Filling
Melt chocolate in the microwave in a small microwave safe bowl or in a saucepan on the stove top. Allow to cool but not set up.
In the bowl of a stand mixer or you can use an electric hand mixer and a medium size bowl, cream butter and sugar together until light and fluffy.
Add in cooled chocolate and vanilla extract
Add in egg. Beat for FIVE minute. Don't skimp on the time.
Pour mixture into the cooled graham cracker crusts.
Refrigerate for 2-3 hours before serving to allow it to set up.
Whipped Cream Topping:
Whip cream with 1-2 tsp of sugar and 1/2 tsp vanilla until stiff peaks form.
Spread over top of pie and garnish with some shaved chocolate if desired.

Looks good, you don't see many recipes where the whole egg is blended in, I was expecting it to be separated

The recipe I have you separate the eggs and cook the yolk with the chocolate, then cool it, whip the white and then fold in the egg whites. I think that is a bit safer than completely raw. You can also use egg substitute which is pasteurized.

Love you, love your recipes but the raw egg is a little disturbing. Instead of saying if you don’t eat raw eggs then just don’t make it, maybe you could have suggested egg replacements.

You could probably make this without the eggs. It's French Silk Pie because it's basically French chocolate mousse in a pie crust. Classic French mousse recipes contain raw eggs. But there are modern recipes out there for "egg-free chocolate mousse" for people who are squeamish about raw eggs. It's basically chocolate-flavored whipped cream. You could probably stabilize the whipped cream with gelatin. I've never tried this but that's where I would begin to experiment if I wanted to make an egg-free, faux French Silk Pie.

I actually do give a replacement idea - to use pasteurized eggs , which have been heated. Glad you enjoy the recipes.

Pasteurized raw eggs are STILL raw eggs.

@@susancollins9074 That is true but they are heated in warm water baths using controlled time and temperature, to destroy any bacteria that might be present and the USDA web site says "in-shell pasteurized eggs may be used safely without cooking." But it sounds like this recipe is not for you. Hope you enjoy. my other recipes.

@@susancollins9074 the recipe calls for a certain ingredient and the baker believes it important enough to the recipe that it is not negotiable. it'd be like suggesting you substitute the butter in a recipe, or the flour. and the baker is kind enough to include the disclosure at the very beginning of the video.
