Mutton biryani with soft cooking lamb and melt in your mouth potatoes cannot be beat! There is no argument that this is going to be the favourite of many many people and we tend to agree!
Ingredients
1kg Lamb meat, cut and washed
Marinate overnight with:
1 tsp crushed ginger and garlic
1 tsp BBQ spice
1 tsp chop and steak spice
1/2 cup maas/sour milk
1 tsp Worcestershire sauce
1/2 cup biryani dhal soaked overnight in tap water
For braising the biryani
1/2 cup oil
3 potatoes, quartered and coloured with egg yellow
2 onions sliced - 1 for braising, one for garnish
1 curryspoon mixed masala
1 tsp hurdee powder (tumeric)
1 tbs rough salt (to taste)
A handful of curry leaves
A few sprigs of fresh thyme
1 large cinnamon stick
2 bay leaves
3 green elaichi (cardamom)
2 Black elaichi (cardamom)
1/2 tsp somph seeds (Fennel)
Star anise (broken pieces)
1/2 cup frozen peas
2 cups rice (soaked)
