As a former German living in the US my most treasured kitchen utensil is my "Spaetzles machine". I make my own drowning them in home-made gravy.

We Yanks try to put sugar or modified corn syrup in everything, and I'm incredibly sorry. I didn't realize how horribly cloying to the palate that was until I had traveled.

You forgot Lachsnudeln. One of my favorites. And in Baden where we lived, they made bandnudeln from Dinkel (spelt.) Very tender.

I used to love Bavarian green beans with spaetzle, they were sold in the frozen section but the company stopped making it, I have dreams about the sauce on this dish it was very buttery and full of herbs. I have always wanted to replicate this dish. Has that baby arrived yet? I’m getting so excited. Is the nursery almost ready?

I don’t know the dish you mentioned, but it sounds lovely 😊 green beans sounds healthier as cheese 😂 The baby hasn’t arrive yet, I will share this information with you though, when the time comes ☺️ I also cannot wait, mainly because I don’t feel good most of the time. Today the rest of the essentials arrive, so I am very excited 🤩 With it we are ready for his arrival!

Here's a variation of Nudel Salat that you might like. Additionally used to what you described is salami (replaces ham), celery root added to peas & carrots (can use eingemachte just wash it first), and plain yogurt (less mayonnaise). But, you can also do an Essig und Öl variation also. Think I already told you, but schinken nudel is one of my all-time work-day favorites. Just I top it with parmesan cheese. (I also cheat at times and instead of using eggs and after boiling the noodles and frying the ham, in the ham fond I add back in some of the noodle water, and the parmesan cheese. Then stir until creamy. Finally the ham and noodles get added back in. (kind of a Cacio e pepe)

One of the signature local dishes of St. Louis, Missouri, USA is toasted ravioli, which is not really found elsewhere in America. I wonder if fried ravioli is related to Maultaschen. St. Louis historically has had a very large German immigrant population, and a smaller but still vibrant Italian immigrant population.

Hi Marta, oh yum. Ì remember most of these, but not the "Höchseit" one, that's wedding isn't it? Our nudelnsuppe was always Chicken. Nudelsalat always had loads of parsley and chives. I can taste them now, I'm back in Oma's kitchen licking the spoon and bowl clean, that's a sweet, sad memory of my childhood. Thank you so much Marta.

And thanks for watching, as always! Hochzeit is Wedding and yes, the dish was traditionally served at Franconian weddings. Thankfully now you can get it at any restaurant, because it’s really beyond delicious. I think my favorite Franconian dish:)

You reminded me of my great grandmother’s Czech noodle recipe Flicky. Mmmm. I knew it as my German grandmother’s recipe. She cooked many Czech dishes for her Czech husband. So my family tends to mix them up. I just got my spaetzel maker. Cannot wait to try that recipe out. Will probably change somethings up to incorporate my California tastebuds. I am thinking that Beef Bulgogi would be delicious with brown butter spaetzel. Enjoy your posts.

3.50 This dish is very close to the original Ragù alla Bolognese, rather than Spaghetti Bolognese. My Youth: But we usually had pancakes (crêpes) with it: spread with hash and rolled up, sometimes topped with bechamel sauce. Like cannelloni, for example, which I got to know much later. Near the Alps, the regional cuisine has Italian influences! Soul Food for me! Now i´m hungry! PS: next Day allways Flädlesuppe

My husband loves spaetzle, living in Australia it is hard to get German egg noodles but I make a few things you mentioned with spaetzle instead of the egg noodles. He also likes plain noodles too, the Italian type from our supermarkets, but he prefers spaetzle.

Italian noodles are good, but you cannot compare them with homemade Spätzle. Good that we don’t have to choose between them 🤩

Mother occasionally made spaetzel to add to her vegetable soup. The batter was made in a large bowl which she held in her left arm at a slant. As the batter would begin to run over the rim of the bowl she would slice it off with a wet table knife letting it drop into the hot water. Does anyons still do this or is this method a nineteenth century relic? Everyone seems to use some mechanical means now.

Käsespätzle and Maultaschen are very familiar, as I have eaten them in Germany and purchased them in Lidl, when they have been available. There are pasta salads here in Finland as well, but they are called "Italian salad"; usually they are readily made and available at grocery stores. I find it amusing that in German, any type of pasta is called "noodles", as here in Finland, noodles refer more to the Asian foods. Some Finns use the word "makaroni" about any type of pasta.

Hahahaha! We call it “noodles” because is actually the translation from German word “Nudeln”. Pasta sounds always too Italian :)

HASCHEE!!!!! This explains why my Grandparents always made sweet tomato sauce 🥫 with ground beef and it was always with macaroni.

@@cooking-the-world OMG, my Oma always made Haschee served over rice and served with Feldsalat. I have tried and tried to replicate her recipe. Mine is close, but not 100%. Oh how I miss my Oma`s cooking.

My mom frequently made the noodles with eggs and ham. She made it usually a day or so after having buttered noodles or macaroni and cheese for dinner. I always thought it was to be thrifty, to save money and not waste leftovers. I never knew it was an actual German dish! My mom was part German.

Oh well, there you go! I think that many of the leftover dishes turned to traditional dishes. I was even thinking of creating a video series of how smart our grandmothers cooked by constantly using leftovers. I think they were way smarter than we give them a credit for.

Yes Larry, that could be, because German cuisine is very regional. Sometimes even the Germans wonder what we eat here in Frankfurt 🤣 Königsberger Klopse are very popular in the North, I always have them when on the trip there 🤩

I don't know, I have never had Goulash in America. I just know that Haschee is a sauce and Hungarian Goulash is a very thick soup:)

@@cooking-the-world well if you have time check it out. If you took your haschee sauce and add a chopped green pepper and then add your cook pasta. Then gave it all a few stirs you would have American goulash. Which in my opinion isn't a goulash at all. LOL

The problem with German noodles compared to Italian ones is the fact that Germans in general use factory produced noodles whereas Italians make their noddles by hand.

That's not really true. It's just slightly more common for some traditional pasta dishes, shapes or special occasions. But go to a supermarket in Italy, the pasta aisle is way longer than in Germany. There is a much bigger variety of pasta shapes that no one would make fresh at home. In addition to that, Italians like their pasta al dente, so much so that they would be considered undercooked by most of Germans. It's impossible to get this level of Al dente with fresh pasta, only with dry pasta or so called "pasta asciutta".
