It was the fresh blood , not dried blood. They were fresh blood, and when the blood becomes jelly blocks. They boil that blood jello, then cut them into small pieces and continue to cook them in the soup pot for more flavor. I haven’t tried the boiled blood yet, but I know about it.

Hi Adam, nice to see you visiting in VN, bread that you dip in small little bowl tasting like curry with intestines is called phá lấu in Vietnamese. The bowl of noodle soup with black jelly look is called pork blood cake, and bowl noodle with shrimp cake mixed with meat seems to be bún riêu in Vietnamese, and purple paste is mắm tôm that is made from fermented tiny prawn.

Fermented Shrimp paste is an optional add on, tiny amount into the broth (noodle). It enhances the umami taste bud as the other commentator mentioned. It never meant to be as much as you had scooped in another video. It's salty. Good luck trying Vietnamese cuisine. Suggestion: find bò lá lốt = charcoal grill beef wrapped in betel leaves 🤤🗯️ follow the smell, your tummy will be satisfied.

The rule to win this fear is keep routin slowly walking when you across the streams of motobike! motor-bykers knows how to avoid you themself in chaos-order! remmember do not runs and stop suddently , accident immidiatly ! Don’t be affraid of and do it if you want to be safety in the crazy- traffic in Vietnam.

The soup you ate is Bun Bo Huê ( Beef noodle soup from the city of Huê in Central VN ) .The yellow ball in that soup is crab ball and the black stuff is coagulated pork blood . The grey stinky paste is Mam Ruoc ( shrimp paste )

normally at sit down places, you usually use the viet bread to dip in to the sauce or whatever you order like bo ne or the like. you dont put the stuffs inside the bread like you eat the normal banh mi as sandwich. however you can eat however you want though. at 7:45, it's pig blood.
