INGREDIENTS
* 1 cup gf oat flour
* 1 chia egg (whisk together 1 tbsp chia seeds + 3 tbsp water, set for 15 mins)
* 2 tbsp milk of your choice
* 3 tbsp melted coconut oil/butter
* ½ teaspoon baking powder
* ½ teaspoon baking soda
* 1/3 cup coconut sugar
* 2 tbsp maple syrup
* 1 tsp pure vanilla extract
* 2 tbsp miso (whichever is your favorite)
* ¾ cup natural, unsalted CRUNCHY peanut butter
* 1/2 tsp sea salt
PROCESS
1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
2. In a large bowl, mix together all ingredients until your dough forms a nice big cookie ball. Let dough rest for about 20 minutes in the refrigerator.
3. Using your hands or a small scoop, scoop out about 2 tbsp of cookie dough, and form into a ball. Place the ball on your baking sheet. Using a fork, press down to flatten cookies to desired thickness-cookies will only puff up a tiny bit. (YUM)
4. Bake for 13-16 minutes. You can bake them a few minutes longer if you like a crispier cookie. Allow cookies to cool on cookie sheet for 10 minutes.
