My previous video showed how a fixed shutter setting will improve stabilization in low light, but with a trade off on noise, and a risk of overexposure when the scene gets too bright.
With GoPro Labs latest 2021 custom firmware release, they introduced Max Shutter Angle, which actually means setting a minimum shutter speed when on Shutter Auto. This is paired with the normal ISO Max setting because setting a faster shutter speed minimum, you have to allow the camera to compensate via a higher ISO so the video doesn't get too dark.
The Max Shutter Angle setting is in degrees of a circle. A full rotation at 360° correspond to a single frame exposed. So for my case when I use FPS 1/25 sec, the shutter speed equivalent are (do your conversion for other FPS):
360° = 1x = 1/25 sec
180° = 2x = 1/50 sec
90° = 4x = 1/100 sec
45° = 8x = 1/200 sec
22.5° = 16x = 1/400 sec
11.25° = 32x = 1/800 sec
Use 1/200 sec as a reference point for good stabilization, adjust to your preference. Your shutter should be on Auto, then use the QR to set the minimum shutter speed.
With this setting, you ensure a minimum level of stabilization, while allowing camera to shorten shutter (together with ISO Min 100) to prevent overexposure when its too bright.
For the ISO Max, no harm trying up to 6400. Test if acceptable in low light, then adjust when necessary.
At aperture f2.8 + shutter 1/200 + ISO 6400, that's already less than EV 5 and quite dark already. If you expect better image, may try running with a Sony A7 mirrorless camera?
