That chef has patience and emotional intelligence for days! So easy to get mad at someone, but to say "Everyone one else in this resturant has had a second chance, so he does too" is incredible. Then he turned it around, so seems like the right choice from the owner!

To be honest, I have my doubts that that tray actually fell. Watching the scene closely, it looks odd, like it's spliced together from scraps of random footage, with a glass shattering noise added in post-production. 29:50 You can see the camera was on the manager the moment the tray supposedly fell. But a visual of glasses tumbling and crashing would have made for a great spectacle, which surely they would have included in the episode if it had happened (and they would have caught it on film since they had the manager in the shot mere seconds prior). Yet they didn't even get a shot of the shattered glasses on the ground, despite having a camera pointed at the supposed event. It makes no sense to not include a money shot like that. Unfortunately, this manner of falsified narrative is extremely common in reality TV. I don't know why they bothered; the manager is coming across as kind of dodgy already without these kinds of editing tricks.

Those dishes above can be considered “the basics”. In Gordon’s mind he probably thinks that if you can’t get those right then you won’t be able to get anything right.

It's a good dish to establish a baseline with. If they fuck up a crabcake there are fundamental problems that need addressing before anything else. You can have the prettiest place in the world, but If the food is shit there's no chance.

The reason maybe billy’s wife had no hope for it, and most owners contact kitchen nightmares to renovate the place so that they can sell it to recover from debt.
