salt sucks out the moisture I use dry rubs with yellow mustard to hold the rub on. Mayo also works

Yep! You posted on Thanksgiving and I am giving special thanks for you two fun folk! I so look forward to each of your postings because you are so nice and Real people. Trying to grind a meager existence out of every mile you log! Ha Ha! One the best things about you kids is that you post as you travel, bringing us to speed with where you were, where you were going and how you got there! Love that here you are in this Giant rig with those cute little pups. Having them along is like traveling with your kids and I always loved traveling with mine whenever . You went right near my house when in Wisconsin. We got so we didn't stop at the TA in Hudson. Hardly ever any place to park. And their fuel was always higher. Glad you pass your inspection. Beautiful scenery shots. Thank you for the video. Happy and Blessed Thanksgiving.

Splitting the chicken is called spatchcock. It helps with even cooking. And lends to a quicker cook as well.
