GREEK YOGURT CAKE
RECIPE
2 cups of (JALNA) Natural Greek Yoghurt
1 tin 395g condensed milk
1/4 cup hot water
1 tablespoon gelatine
2 tablespoon vanilla paste
1 packet 400g Savoiardi biscuits (lady fingers)
3/4 cup milk
2 shots strong coffee (if you are using instant coffee 2 tablespoons in 1/4 cup of hot water)
1 block baking chocolate 70% cocoa
300ml cream
1 tablespoon honey
Method
Place yogurt in a bowl and add condensed milk, using a hand mixer combine and mix well. In a small jug add hot water and gelatine and mix really well so there is no lumpy bits. Add this into the yogurt mixer and do this slowly, make sure you are using you hand mixer the same time time. Add your vanilla paste and mix well. Place this in the fridge for about 10 to 15 minutes so it start to set a bit.
You can now make your chocolate ganash. Pour your cream in a saucepan and bring to boil and the turn of your heat. Break up your block of chocolate into little bits and place in a bowl. When your milk is hot pour this over the chocolate and let it rest for about 5 minutes and then stir this until it combines. If you still have some chocolate bits place in the microwave for about 30 seconds and stir it again. Set this aside and let this cool down.
To make you milk and coffee mixer place this in a bowl big enough to dip you Savoiardi biscuits.
Prepare your baking tin. I used a 23c cheesecake tin. (You can make this In a rectangular tray)
Line your tin with grease proof paper. prepare your tin with your first layers of biscuits. Dip your biscuits into your milk mixture, (do not soak then, just dip them in turn them and out) once you have done your first layer of biscuits take your yogurt mixer out of the fridge. Give it a little stir and then spoon a layer of yogurt over your biscuits. Add another layer of biscuits and then yogurt again. Add your last layer of biscuits and then place this in the fridge for about 10 minutes.
Give your chocolate ganash a stir with a whisk and then take your cake out of the fridge and pour this over your cake. Place this in the fridge to set it will need at least 5 to 6 hours. If you can make this the day before it would be even better.
You can decorate your cake with strawberries, mix berries or anything that you like.

you did not put any sugar in the yoghurt and condensed milk mixture. is that correct? I wish to try your recipe, but I would mix in some sugar and use popular biscuits and cover with strawberry jam (like we have in Romania). what do you think? THX for your recipe and your time to share it with us!

Hi Raphaelly, no sugar needed as the condensed milk sweetens the yoghurt enough. Strawberry jam sounds delicious, you can add what ever you like :) thank you Feel free to post some pictures on my Facebook page I would love to see what you create!
