I used to think that I needed to go to a restaurant for good steak. Over the last couple years I have learned the best steak is usually cooked at home.

I have been watching your recent videos, and I just love them. I went back through your archives and found this one and I noticed that you don't have your Australian accent that is so prominent in your recent videos! What happened? Where you trying to hide it and sound more American? The Australian accent is so lovely.

Sounds like a great way to add some more flavor to the steak, especially if you add some herbs and spices to the butter. Like garlic...

Perfection, I just added Ribeye steak to my Costco list - lol !!! I love doing that on my rack of lamb also - less the butter though, there is a enough fat on the lamb

Little tip, make sure to use unsalted butter. I had a ribeye steak with kosher salt like her, and since I added salted butter, I found the steak too salty

About how many seconds did you leave it on the 2nd sear/butter bath?

Hi Jess, I tried the JKF on my steak last night. I used steak about 1” thick rubbed with HC black. Cooked on a super hot Weber kettle. Flipped every 30secs. I did not get a great crust and overcooked it. Total cool time was about 4 mins ended up at 60degrees. Any pointers, to help getting the crust without overcooking it?

Yes, just make sure to use a meat thermometer. That way the internal temperature will never get over the desired amount and your steak will be perfect every time.

The constant flip during the crust stage is not ideal- you want all the fat and juice to drip to the bottom where it meets the flames/heat and has a magical reaction that turns into flavor. Flipping often is actually used for cooking your steak through while minimizing crust formation- the exact opposite of what you want here. That’s why your steak came out grey and medium instead of medium rare.
