It is time to harvest the winter squash. Some of them are not completely ripe yet, but there is a freeze in the forecast for tomorrow so it is important to get them inside before they get damaged by the cold. We have three different winter squash this year - Cushaw, Red Kuri, and Butternut - with all of them growing on the Back To Eden part of the garden. The winter squash thrive growing on the bed of wood chips since it not only ensures they have plenty of moisture all summer long, but also because the squash can get their roots down into the rich soil under the chips. This year we had a very good crop of winter squash, which will last us well into next spring or early summer. Nine Red Kuri, thirteen Butternut, and seven Cushaw squash.
