This healthy and delicious Almond Ice-Cream is Dairy-Free, Vegan, naturally sweetened by dates and loaded with the goodness of almonds. It’s packed with all wholesome ingredients and yet it checks all the boxes on a rich n indulgent ice-cream. Do try and let me know how you liked it !
INGREDIENTS
*750 ml soya milk ( if you are not vegan or don’t like soya milk, feel free to add your choice of plant based or regular dairy milk )
*1 cup hot water
*1/2 cup seedless dates
*2 tbsp oat flour
*1/2 cup almonds
*1/2 tsp vanilla extract/ essence
*some chopped almonds for garnishing
INSTRUCTIONS
1- Add almonds in a medium sized bowl followed by hot water. Let them soak for 1 hour. Meanwhile add oats in a blender and grind into a fine powder.
2- Now peel off the skin of the almonds and keep them aside.
3- Add milk in a medium heat pan and bring it to boil. Turn the heat low and simmer the milk for 10 minutes to thicken it up. Make sure to stir occasional so that it doesn’t stick to the pan.
4- Now add almonds and dates and stir for 5 minutes on low heat. Add in the oat flour and stir for 1 more minute. Turn off the heat and let it cool completely.
5- Add the ice-cream mixture in a blender along with vanilla extract and blend until smooth and creamy.
6- Transfer the mixture in a container. Cover the container with aluminum foil and freeze the ice-cream overnight.
7- Scoop out the ice-cream in a bowl, garnish with chopped almonds. And enjoy!!
