You do markets and delivery , have you considered having customers preorder and coming to your location for pickup be it at a market , a retail space or your home within a particular time window ? Example it’s common here in SF for micro bakers to pre sell their baked goods as boxed sets, with a pickup window that’s done once or twice a week. Usually I see the pickup on Saturday Mornings.

I would suggest you grease the tin, either butter or oil, then dust with flour before adding pastry. You won’t have problems with sticking to the tin again. You can lightly dust the pies on removal if flour residue remains.

To have achieved all that you have in just one year is amazing. You should be proud and confident that with every challenge ahead you'll find a solution and continue to grow your business and your self esteem. Hi Lily, You are a great inspiration and I love to watch your videos. I noticed you do a few vegan products like pies and croissants. Would you mind to share where did you find a recipes and instructions how to make them? I'm vegan myself and I love baking bread but want to upgrade my skills and do some sweet and savory goodies 😊 Don't give up, you doing amazing job and your hard work will pay off one day. And the experience you have gained along the way... nobody can take it away from you. All the best!

The struggle, the doubt, feeling overwhelmed…it’s all completely normal. You are gaining so much valuable experience. Markets are definitely the way to go I think. Have you considered only doing markets and your regular customers getting their bread from you there. It could be an option if markets and baking twice a week are difficult. Happy anniversary, keep learning and perfecting, get help, don’t burn out but no the pain probably means it’s worth it. Best wishes

Hi lily ✋my name is Olivia i love watching your videos on my mom’s tablet while I bake . Me and my mom started baking with sourdough a few months ago when she got a new starter from her friend. I love baking and me and my mom are going to start selling at a farmer’s market , but I had some questions for you. First off what was the hardest part of starting your own business? What time do you go to bed at night? How do you keep up with all the orders ? Well if I keep going your going to have a book to read so I’ll end here. 😊

Hey Olivia, thank you so much for your lovely message! Ooh so many answers for you - hardest part is probably the steep learning curve going from self taught baker and scaling up recipes massively! I try to go to bed by 8pm ish and sleep by 9pm to be up between 4am-4.30am ✨💕hope these help

How many Kg of kind of dough do you typically make for each product you make for market? It must be challenging to chose which product you will be making for market. Staying calm is very important when handling situations and making decisions. Congratulations on 1 year anniversary for your micro bakery.

thank you Robert! Most I've made is 48 loaves for a market, now do maybe 30 or so plus pastries, preserves and one other product of choice... always hard to know how much to produce especially as the weather is such a changing variable
