These beans are perfect for your next Mexican feast! Heat and mash to your desired texture for quick and easy refried beans. I hope this inspires you to get busy canning beans, a great pantry staple.
2 lbs. Dried pinto beans (soaked and par cooked for 30 mins.)
3/4 t. Salt
1 t. Garlic powder
1/2 t. each Ancho chili powder and cumin
5 Pint and a half Ball Mason jars with lids and rings
Pressure can 90 mins.

I know this is an older video, but with the crazy store stockings issues I thought I should lean this as we eat refried beans often. It is about amazing! I canned them yesterday and used a jar last night what a hit! Thank you

I just made these beans today using ham flavored broth, and oh my goodness, they are so good! I used the same spices, and in one jar, I added a pinch of red pepper flakes. Can't wait to see how that one tastes! My house smells amazing.

I canned 15 pints a while back with this recipe and I just want to say how delicious they are. My husband was strictly a black bean man but these he cant get enough of. Thanks again for this wonderful recipe and I will be making another batch soon. My mom and dad are really enjoying them as well. I love how quick they turn into a meal when you dont know what to a make just grab a jar and make a quesadilla and some beans and hot sauce and there you are. Thank you!!

I am doing your canning recipe right now. I am new to canning and this is the second time I am trying a pressure canning recipe. I don't know that I did it correctly last time but all the cans sealed. Your video helped me understand the rocking principle on the weight.

I wanted to mention I used this recipe this morning. I put up 12 quarts. I normally keep a good supply of canned beans. Some of them spicy and some ready for re-fry. Tomorrow I am canning split pea soup. Having cans of soup, meat etc sure comes in handy for camping, traveling. Good home cooking and zero preservatives

@@carol-thriftychichousewife6231 I am new to this canning stuff, and I was wondering if I possibly could add fresh onion, garlic, and maybe even a little jalapeño to the jar? And does it need to be water or can I use broth? PLEASE help me, I have contacted fresh preserving through ball and nobody has ever gotten back to me. Oh, and what about adding some kind of meat like bacon or ham hock? Thanks for the info

@@jennifermack5804 hi Jenn. Not sure if anyone replied to your question. I just saw it this very moment. I all all of those things to my beans. If I add whole jalapenos then I place a small slit length wise to the pepper. I cook chili beans in a crock pot and even can that. Just make sure your jar rim is clean with vinegar before sealing and check it sealed after. Have fun.

I love watching you! I learned to can from my MIL years ago. When we canned it was ALWAYS a weekend project. I like your videos because you do manageable projects. I am learning to do one batch at a time, when I have the time. It doesn’t have to be a drawn out back breaking process. I guess back in the day, they had to do it that way?? I just found your channel. I've done the BBQ pork, baked beans and these today. I love them! And so does my family. Thank you so much for sharing with us. Two ideas about beans: 1 if you use more than one kind of bean, it cuts down on the flatulence 2. Epazote is a Mexican herb that also cuts down on flatulence

I put up a batch of your Mexican Beans, and found out that cumin is not a spice that we like any longer. Used too, but I guess our tastes changed with age. Now I mix it with canned plain beans and it is perfect for our tastes. Then I added a box of Rice-A-Roni in the Spanish style for a side for lunch one day, and husband and I loved the combination. Will be eating it this way for a fast lunch. Thanks for the recipe!

I can my beans, then I also can browned hamburger that way they are ready for a quick supper if I forget to take something out of the freezer for supper. I sometimes use the ground beef for spaghetti too!

I am 60 years old and just started canning, but always wanted to but I was so afraid of making my family sick with that "B" word. I have a question....... Hi Carol. I know this is an old video but today is the first time I watched it. I canned some pinto beans, today,,,3 pints in the Instant Pot Max. It has a canning feature built in. I have a regular stove top canner but I love just plugging the Instant Pot in, pushing a few buttons, and letting the machine do the rest. I used salt and onion powder in my beans. I used generic lids on my jars and the all sealed. Hallelujah! 😀

@@carol-thriftychichousewife6231 Actually, I've watched Pam from Rose Red Homestead use the Instant Pot Max for pressure canning and she tested it with a data logger to make sure that the food reached a high enough temperature, inside the jar. She is at a high elevation and it worked for her. I'm at 30 ft. above sea level. So, I'm sure enough that the food is safe to eat to risk it. Thank you for your concern, though. You might want to check out some of her videos.

Don't that overcook them being cooked twice?..I've honestly only done rebel canned beans from raw state,that's why I'm here to see how long to pre soak n cook n how much cooked beans to put in jar..

I have an All American 915. I love it as I find it to be the perfect size and will last a lifetime. If it’s in your budget I highly recommend it as youll never need to replace it 💕

I have been canning for several years but just discovered your channel a few days ago and love it! Today I canned this Mexican Pinto recipe. One jar didn't seal so I opened it up to taste it. It was very bitter. Have you ever experienced that with pintos? I searched online and think it must be the age of the beans or our well water. I washed them very well, soaked them overnight, drained and rinsed them again, then put in clean water to boil for 30 minutes. They do smell wonderful.

Donna Currie glad you’re here! I’ve never had a problem with my beans being bitter. But I agree it could be the age of the beans. I always check the date on the bag . But I think more likely it’s your water. I try to use filtered water when I’m canning. Softened water is recommended for canning. Well water can cause off flavors as I understand it. I don’t have a well so I can’t speak from experience. Have you ever had anything else you’ve canned taste bitter or off? I’m so sorry this happened. That’s disheartening to put in so much work for them to not taste good.

Donna Currie something else that came to mind is Flat Sour. If you’re not familiar Flat Sour happens when you leave your jars in the canner for too long after processing. After you remove the lid on your canner remove your jars promptly to avoid it. 😊

I let it sit 10 minutes after removing the weight then took off lid and removed immediately. I had never heard of flat sour before a few days ago. I always remove my jars after the 10 minutes. Thanks

I know this is an old comment, but some people say garlic powder or just garlic tastes bitter to them after they've canned it. I think it's an individual taste bud thing, I've heard another youtube talk about it.

I am new to canning, just trying water bath this week for the first time. Did some dry oven canning of dry items, thought I was hotsy totsy. And at 6:50 I think you answered my question...even if the bean is totally cooked, it MUST MUST MUST be pressure canned? DRATS! I have an expensive glass cook top and the pressure canning has me crazy nervous. I was hopeful I could do water bath for a cooked bean. Woman, you burst my canning bubble. 😥 Which I am supposed to do that with that pokey thing right?🤣

I’m just now starting to get interested in canning. I make very good spicy pinto beans that I would like to can. I use a large ham bone. Am I able to precook the beans the way I normally do but maybe undercook them before canning them? They also have a can of rotel in them. Can the tomatoes from the rotel be left in the beans when canned? I also use these beans for refried beans!

It isn’t safe to can dry beans. Processing times were developed using rehydrated beans

The canning cook time is for dry beans or fresh out the garden. I’m not sure if it makes a difference but we are new to canning.

Brandon Purselley times given are for dry beans. It is my understanding only green beans, wax beans, Lima or butter beans can be canned from fresh.

Hi! I am watching your video 2 years later, so I hope you answer me! Can I add bacon fat to the water that I cook the beans in before canning? We like Salvadorean style beans with jalapeño, onion, and lard or bacon fat.

Hi! I would add the bacon fat when you open a jar. It isn’t recommended to add additional fat when canning as it can interfere with heat penetration 😊

I’m sorry but no. Beans are a low acid food and must be pressure canned to be safe to eat 😊

hello, noob canner question here. it sounds like your beans are still somewhat hard as you put them in the jars. do they finish cooking during the canning or do they need to sit in the jars for X amount of time? or am I wrong and are they soft already when you put them in the jars?

joe doe hi! Yes, you are correct. My beans weren’t fully cooked. I soak them overnight drain them, add fresh water then bring them to a full boil. Strain them to add to the jar (after adding my spices) to 1” headspace then add cooking liquid maintaining 1” headspace. They finish cooking in your jar as you can them. But you can always cook them to your liking prior to canning. But to follow safe canning guidelines you must soak them 12-18 hours and bring to a boil prior to canning. Hope that helps. What kind of salt do you use? Also if I'm using pint jars ( can't find pint and a half due to the apocalypse ) what proportions do you recommend for the spices? Don't want to overdo it.

Sharon S lol... I use canning salt but any salt will work here. For pints use 1/2 t of salt, 1/2 t. garlic powder and 1/4 t chili powder and cumin 😊

Thank you :) Being from Texas I miss the Mexican cuisine and real refried beans. Making pintos each time is such a pain and makes so much so this will be so much easier for my husband and I! Love your channel and FB group. So happy to have found you. Keep up the great work and encouraging us to keep canning such wonderful foods! I personally find so much inspiration in your posts and videos and find myself canning much more than I have in the past and learn something new every day. The beans are currently processing in my 915 for 75 minutes and can't wait to try them on Taco Tuesday 😋

Im sorry for the dumb question..... do you just rinse and leave the beans in a pot on the store and bring it to boil then count the 30 minutes or is it 30 min from start of heating?

30 minutes once they start to boil. Boil gently (simmer)

Ok so I tried this, made 4lbs +/- of dried beans soaked overnight and all day, in pint jars (what I had on hand) I think I may have filled them too full of beans and not enough water because they’ve pretty much soaked up most of the liquid and what is left is very thick looking. Also parcooked for 30 mins as suggested. Spices also pooled on bottom of the jars. Made 15 pints exactly. What did I do wrong? They’re still ok to eat, right? All sealed beautifully. Love pressure canning, but very new to beans. :o

Danielle Diakoff-King I’m sure you didn’t do anything wrong. This has happened to me. I’ve learned beans still swell some even after soaking and par cooking. Your spices will always find their way to the bottom of the jar, no problem. You may find the top layer of beans may darken since they’re not covered with liquid but they’re still fine as long as your seal is in tact. You can discard the discolored ones if you choose. Just add more water to reheat your beans. Your beans should be fine to eat as long your jars sealed (always check when opening to eat). Next time fill jars 2/3-3/4 full of beans then add liquid and always make sure to debubble as you may be able to add more liquid once air bubbles are removed. Hope this helps 😊💕

Thrifty Chic Housewife ok next time I’ll have to get bigger jars. I’ve never seen pint and a half for some reason... I think I was a little greedy with how many beans I wanted to fit. Glad they’re ok. I don’t mind the darker beans. Thank you!!! 🙌

I know this is an old video, but i have a question for you, i canned pinto beans for the first time today in my presto electric pressure canner, i did get a little siphoning on 1 quart, and that quart the water is just a little below the beans, so my question is, at what point do the beans stop bubbling...i have had out foe over an hour...and the 1 jar that siphoned i can still see bubbling coming up....it cannot still be boiling the rest of them are not bubbling

Can it be cooked beans made with verious vegetables with spices onions garlic and and stuff like a beans stew. After cooking, how long can it last ? And how do you eat it after lets say a month or a few months? How long does it keep after opening the jar? How safe is this ? Is it safe enough to be sold. What does the law say about this? Why isn't the shops using this method instead of chemicals and preservatives?last question... do you have to use a pressure cooker only? Can't it be a a normal big saw pan ? Sorry about the long essay.... I'm new to this.... I cook lovely beans but I'd love to sell them as my friends love it.

Great video. Would love to see a video in how you make your refried beans from the can. Sounds silly, but I have always been curious do you put oil/lard in a pan, additional spices... then start mashing! Be fun to see.

Patty hi! Yes, I’ve rested them and made my refried beans with them. They were delicious and in my opinion better than adding the spices after opening your jar of plain beans. I will continue to make them this way. I was very happy with the results. Thanks for watching 💕Carol

I would add the same I think. I wouldn’t increase it by more than an additional 1/4 t.

So just to clarify...you soaked them overnight, draining the water. Then boiled them for 30 minutes, draining that water. Then added them to your jar with the spices, adding new hot water? Also, did you say pint jars process for 75 minutes? Thanks!

Help!! I’ve never canned pinto beans. When I make them I use a handful of salt and a stick of butter. Can I can when using butter in the recipe?

LInda Lockhart no dairy. Some tested recipes will allow for small amounts of butter but I wouldn’t do that here. Add the butter when you open the jar 😊

Drain the beans. Add 1T of oil or bacon grease to a pan, add minced garlic, then beans, mash with a potato masher to desired consistency and heat through

I keep seeing videos and in the Better Home and Garden canning book that you should boil all home canning food before eating. But the Ball books don’t mention it. Can you please verify this? As a new canner this is important to know. Thanks 😀

The Better Homes and Gardens canning book is older and not a tested/trusted source 😉. But in years past it was advised to boil your food for 10 minutes prior to eating. However, if you followed all processes and procedures it is not considered necessary. Crystal Luna Lloyd the canning experts say for best quality use within a year. I keep my home canned goods for three years with no change in quality 😍
