I make a sweet potato hummus. I roast two sweet potatoes in olive oil, sea salt, cinnamon and several cloves of garlic. One can chick peas with tahini, half a lemon squeezed. I use the juice from the chick peas to help smooth the hummus. Turns out quite sweet tasting and the cinnamon adds a nice spice to it. I usually pair it with warm pita bread and sliced red peppers. Goes great with honey, pumpkin seed and dried cranberry crackers.

My dad is from Israel and there you always add cumin and you don't need oil in it at all. You can just take water instead or broth from the garnanzo. And also serve it with paprika powder and some olive oil on top. Then on the side some pita and a chili and coriander paste called "skhug". Just google the recepie. It's delicious!

I don't have tahini available in my area so I just throw in toasted whole sesame seeds, a bit of sesame oil and a good teaspoon of mild paprika. I also sprinkle it with olive oil before serving. sometimes I do add a few rosemary leaves and more garlic. Also being a pattissier, I do make a sweet version sometimes which uses Nutella and mexican chille

Hummus NEEDS cumin in it. Seriously, the very foundation spice to add. Also it'll be way better if you cook your chickpeas yourself. Just simmer them in water, an onion and a few garlic cloves (no salt!), for several hours until they completely dissolve when u try to squeeze them with your fingers. It'll take a while but you can portion it and freeze them for later use. The water it boils in becomes the most amazing liquid to control the Hummus's thickness (use it instead of water). And after you freeze the cooked chickpeas, they grind much better and that creates a very smooth paste. Oh, and the brand of Tahini is very important. The better the Tahini, the better the end result will be.

doesnt "need" cumin in it. the base has no spices, nor garlic, nor olive oil mixed up in it. this makes it spoil faster. the traditional and tastiest way to do it, and the one that gives u max control of flavours is this, in this order: tahini sauce is made separately with tahini paste of lightly roasted sesame, salt, lemon and water. thats it. chickpeas are cooked and rinsed till they peel. u hand-ground the chickpeas, b/c a food processor raises its tempeture and it easily spoils. add the tahini sauce and mix. taste and correct salt/lemon as needed.. plate it, make a little well in the center, pour olive oil, sprinkle some paprika and parsley. if u want garlic - u mince it and add olive oil, and put the mixture in the "well" u made in the center of the plate. source: lebanese origins, we invented that shit.

@ThisIsMyFullName 9 жыл бұрын
You don't need to cook them for several hours. Since you're going to blend them anyway, it doesn't matter if they become dissolved, you just need them to be cooked trough. I find that cooking them for around an hour, is usually enough. But chickpeas can be very different, depending on which you buy.
@AlonTako
@AlonTako 9 жыл бұрын
ThisIsMyFullName The texture of the paste is very important, and cooking lengths change the texture greatly. Some like it coarse and some like it smooth, for a smooth texture you have to cook it a long time so that it won't get too hot while grinding.

Just for if people get tired from the standard humus, you can always ad some herbs, which will make it fresher in its taste and for a bonus, you can add whatever you think tastes good. Personally, I would recommend a swizz-mint, but if you’re not growing mint yourself, peppermint should do nearly as well.

My version - only one garlic clove, twice the tahini, more water, and a pinch of cumin. Round here it's also customary to make an almost bland hummus , then prepare a sauce to put on top - lemon,olive oil, garlic and cumin, like a stron vinegrette. Its called "Tatbilla". 2 tbsp.over each hummus portion, and you are good to go. Chopped parsley garnish is authentic for this.

For Tahini, go to your next turkish/arab supermarket, there you will find it, don't try to find it in a "regular" one (depends where you live ofc ;) I live in Germany, you wont find tahini at Lidl or Aldi for example). I for myself miss some ground cumin in there, it is a very typical spice for the region where hummus is served traditionally. (Also the cumin prevents some not nice things happening to your stomach if you eat a lot of peas ;)) Another nice thing to do is a spoon of peanut butter and if you like the zest of the lemon. Instead of adding only "tasteless" water to it you can use the water of the strained chickpeas, it is a little bit thicker and got the flavour of the peas already in it. Garnish the hummus with some olive oil and some dried oregano or basil, if you like you can also add ground red paprika powder to it. Have fun cooking and enjoy your hummus!
