OK we made this about 6 months ago and put the bottles in the fridge. We did not use sugar. We soaked glutinous rice over night and steamed the next day after it cooled I put the yeast balls, after about one week I added 1.5 liter of water for every kilo of rice .after about 40days I strained the rice and squeezed all the liquid from the rice with a cloth. From 3 kilo of rice I got 8liter of wine. As I said before we put the bottles in the fridge. Now 6 months later we tested the taste. IT IS SPECTACULAR!!! perfect for celebrating the New Year! Happy New Year thank you!

​@@Spectacular-cuoredicioccolato Once I made sugarcane wine.After bottling, there was a blackish layer on the top side of wine. I think that was due to oxidation. My question is that how to avoid this as it affects the taste of wine too??

In central China and Japan, people also make rice wine. We add a lot of jasmine flour cured in honey. We collect fresh jasmine and add them in honey for months until they are totally mixed. Then, mixing with the rice wine before fermentation (or after fermentation, I am not sure). It gives you a fantastic taste.

I followed you 3 years ago. Learned how to make wine :) my friends and neighbors loved it. Only they would fall asleep in my home. Due, to corona I can’t get fruit so I said let me get rice wine so here I am again :)

This isn't real saki. He real.japanese rice wine doesn't have or has a special yeast added . This is simply using yeast to turn rice starches to alcolhol using yeast And there's alot better tasting sugars to ferment than rice sugars . The rice is used for the yeast and the sugars in real saki

Saki is higher alcolhol than the slop you made in the video . What youre making is sugar wash basically and I don't think I was talking to you at all brah . Why don't you make some real booze instead of instructing people on how to basically make an undrinkable mess ?

I made rice wine in last month... But used baking yeast instead of wine yeast. Is there any chance that methanol will be created in wine because of baking yeast? Will it be safe after 1.5 month to drink?

Love to use rice wine or sake for cooking all kinds of dishes..... it's great on marinated chicken or any fowl really ....... but a shot or two is great as well and even add a shot to a hug jug of Mexican HORCHATA " RICE AND CINNIMON DRINK " ITS REALLY GOOD .

You can make sparkling wine from your homemade wine by adding a little sugar in the bottle before filling. Homemade beer makers sometimes use this technique to naturally carbonize their homemade beer. Then store/wait six weeks before serving. Research the correct amount of sugar to add, else your bottle could become over-carbonated and explode. If doing this method there will be residue yeast at the bottom of the bottle after six weeks. So pour carefully, and try to use smaller bottles like a beer bottle and share your wine. This method will not work using store-bought wine, cause there is usually no remaining yeast in a bottle of commercial store-bought wine.

No risk, this fermentation produces ethanol, CO2 and that's about it. Only risk is, if you don't do it right, you may get a horrible wine that will go down the drain.

I enjoyed a lot during the lockdown making crazy strong wines while others around me were craving for whisky and beer and buying them in black from the milkman. It just cost me the price of 200gm sugar and two handfuls of rice to make a bottle of wine. 😂😂😂

A) Put the endproduct in the freezer (plastic bottle) and if it is frozen, release the cap and let half of that bottle drip in a bowl. Alcohol has much llower freezingpoint than water so you now what first comes out of the bottle ain't water.

I doubled the recipe and it has one more week to ferment until bottling. Cant wait to see how it turns out. I’ve made traditional Korean rice wine but it’s a little funky and sour for me. Hope this recipe turns out better. Thanks!

New subbie here! Enjoying your vids. I have Never made beer or wine. I love ginger beer tho. Unfortunately I buy from store. :-(. I do Want to make but haven't tried yet.I love ginger. I have some ginger in fridge just begging to be a bug. Lol. I did make apple cider vinegar tho. It turned out good. Also made couple small jars of kraut with cabbage and Brussel sprouts. Yummy. I am curious as to why you dont fill up your fermentator to almost the top with more water? What size is it? It seems you only make small quantities of 1 or 2 bottles of beer/wine? Is there a reason for that? Lastly, you say to keep the yeast at bottom to use in next ferment, but I thought those yeast were dead? You REALLY make beer and wine making look super easy. I gotta get the right tools tho. Where did you buy the specific gravity ruler and the plastic fermentator? Tfs!

Hi cuoredicioccolato! I plan to make about 4L of water. So if I follow your recipe does it mean that I should use 1kg of rice and 2kg of sugar? Won't it be too much sugar for 4? Also, did you use sticky glutinous rice or just an ordinary rice?

Moreover, I have trippled the ingrediants of the rice wine what you showed over here. A question: will it be a problem if I wait more than 10 hours (24 hours) for the hot water with sugar and rice to cool down?

The formula for determining alcohol by volume percentage by Specific Gravity units is OG (original gravity) - FG (FG) X 131.25. In this instance, 1.125-1.052 = 0.073 X 131.25 translates into an ABV of 9.58%.

Generally with all the fruit wines @cuoredicioccolato says that we should shake the fermenter daily so that the fruits floating immerse into the liquid. I just want to confirm if this has to be done in rice wine also ?

Which yeast should be used. Because when i had make ginger beer with local yeast available, after fermentation it smells stinky in nose. So is there any specific yeast i should use or any yeast will work? I loved ur toutrials. Thanx
