Here is what you'll need!
PAN-SEARED FLAP STEAK
Servings: 2-4
INGREDIENTS
1 pound flap meat
½ cup low-sodium soy sauce
2 tablespoons ground black pepper
4 large cloves garlic
3 tablespoons vegetable oil
Gallon-sized plastic zipper bag
Cast-iron skillet
PREPARATION
1. Place flap meat, soy sauce, and pepper in the gallon-sized plastic bag.
2. Place garlic cloves on a flat surface and crush with hand using palm. Just enough to crack the clove open a bit.
3. Add garlic to bag and seal, making sure to remove as much air from the bag as possible.
4. Massage the contents of the bag to ensure the soy sauce mixture is completely coating the meat.
5. Leave bag in the refrigerator to marinate for 1-12 hours.
6. Place cast-iron skillet in cool oven and preheat to 475°F/240°C.
7. Remove steak from marinade and thoroughly pat dry.
8. Once oven is preheated, transfer skillet to stovetop and place on place on high heat.
9. Add oil to skillet.
10. Once oil starts to shimmer, but before it starts to smoke, carefully place steak in pan.
11. Flip steak every 30 seconds to a minute, moving the steak to the hottest parts of the pan each time.
12. Once internal temperature reaches a few degrees below 135°F/57°C remove steak from pan and place on a cutting board to rest.
13. Let rest for 8-10 minutes.
14. Slice steak against the grain and serve!
REVERSE-SEARED RIB EYE
Servings: 2-4
INGREDIENTS
1 1.5- to 2-inch-thick rib eye steak
Salt
3 tablespoons vegetable oil
Optional: Pepper
PREPARATION
1. Liberally season steak on all sides with salt and (optional) pepper. Place steak in fridge for 1 to 24 hours. If leaving for more than an hour, cover with plastic wrap.
2. Preheat oven to 275°F/140°C.
3. Transfer steak to a wire rack on top of a baking sheet.
4. Bake for about 20-30 minutes, until the internal temperature reaches about 95°F for medium-rare.
5. Preheat cast-iron skillet on high heat for 10-15 minutes.
6. Add oil to skillet.
7. Once oil starts to shimmer but before it starts to smoke, carefully place steak in pan.
8. Cook for about 1-2 minutes per side, or until the internal temperature is a few degrees below 135°F/57°C and a dark crust has formed.
9. Rest the steak on a cutting board or wire rack for about couple minutes.
10. Slice steak and serve!

Tri tip is my go to. Grey Poupon rub, Pappy's blue label seasoning. Grill slowly for 90 minutes off direct heat and pull at 130*, rest 10-15 minutes. Tender and perfect to eat sliced or as a sandwich.

Vodka, sake etc. neutral tasting alcohol is great marinade base, because the alcohol seeps really great into the meat and helps flavours get in there.

My first few steaks were like dried rubber. There’s no perfect steak, you just get better with your own experiments. It also helps to know basic things like dry brining steak and 2 step sear.

Thanks to this vid I just cooked a DELICIOUS medium steak for dinner. I used a prepackaged marinade and the flavor was even better once it got that crust!! I used less oil though-

the reason you wait before cutting into the steak is to let the juices redistribute back into the meat. If you don't wait and you cut into the meat right away the juices leak out and your left with a dry steak.

Another approach better than the one you suggested when refrigerating is not to salt and cover the meat with cling wrap! Dry the meat off with paper towels, then salt heavily on both side and put it on a wire rack where air can circulated around the meat over night! The salt will draw out the water through osmosis and the next day the steak will be dry on the outside, slightly darker , but guaranteed to get a much better crust with a more tender and flavourful steak! 🥩 👌

i tried chuck eye this week just because it was so cheap, 6 bucks for two 1 inch thick steaks. cooked in a stainless pan in avocado oil. seasoned with kosher sea salt and large fresh ground pepper. threw some onions and garlic gloves in the pan with some thyme after searing them, and then butter. basted until done and it came out great. very tender, and i got a little lucky with the doneness as it came out perfect, just a bit less than medium. but not medium rare. i had to dif around a bit to find a package that i liked based on the thickness and fat content, but i think its a steal if you can get one you like.

Mario F. Actually, unless you're cooking meat that's breaded or battered or if it's dusted with flour, it doesn't soak up the oil. The meat is releasing it's own fat and steam so the oil is being pushed away as it sizzles. It's just on the surface and if you dab it with a paper towel when it's finished, you'll be getting pretty much no added fat. A tablespoon or a quarter cup of fat or even if you deep fried it, it will add about the same amount of oil which is negligible.

Really informative video. You packed a lot of facts into 7 minutes. I must say that may be one of the problems, as the Voice was so fast I couldn’t keep up. That's just salt beef. At minimum you need salt, pepper, garlic powder, onion powder, some kind of citrus fruit (lemons or an orange work fine), and (optional) beer. First you rub the dry ingredients into the steak. The you squeeze the citrus fruit(s) and pour the (optional) beer for the mariande. Then mariande for a minimum of one hour in the fridge. Then cook to how you prefer your steak. If cooking in a cast iron skillet use butter or olive oil to prevent sticking. If on a tradtional grill the no non stick measure is needed.

imperallady their "bake then sear" method isn't for making better steak, but its safer for beginners. You should sear first, so that the crisp outer steak seals in all the juicy goodness for the baking.

Y una de las carnes que se muestran como corte barato (Flap Meat) en Argentina le llamamos "entraña" y hace años que dejo de ser un corte barato, hoy en dia es un corte muy apreciado para nuestro clasico asado, aunque en este caso considero que macerar la carne con salsa de soja y ajo puede aportarle sabor.

Pepper after searing or you risk it burning which creates a bitter flavor. This mostly happens with finer ground pepper, not so much coarse ground pepper as with 'Steak Au Poivre'
