It's also good to fill an ice cube tray with it. Once it freezes, put the broth cubes into a bag. Take them out and use as needed.

I just made this broth and after straining made a vegetable soup adding grated tomato, carrots, potatoes, chick peas, green beans, spinach, parsley and thyme then bowled it with cooked Orzo pasta and added torn basil, grated parmegiano reggiano, EVO and S&P and it was absolutely dee-lish-ous!!!... a real keeper!

Why didn't you just use the veg which had been used to make the broth & add the chickpeas; rather than waste vegetables? No wonder the planet is dying.

Not me. My 'broth' is the flavoured liquid from cooking dried pulses from scratch. The soak liquid goes over my potted plants; which love the nutrients humans cannot absorb. Nowaste; love the planet.

Love this recipe! Would just like to add that, if you save up all your carrot and potato peels, celery trimmings, onion peels (seriously, they add beautiful color), tops and bottoms of zucchini, peppers and eggplants, carrot tops (don't let the cashier pull them off at the supermarket!), etc. -- pretty much any vegetable discards that aren't strong-flavored brassicas, and store them in the freezer for not more than 2 weeks, you can make a delicious veggie broth, using the same basic method, with just trimmings. Great if you're trying to save $$$. Thanks again for the great recipe.

That's exactly what I do. It makes the best tasting broth and you're just using what you would normally throw away.

I cook my chickpeas: stir fry them in olive oil a few minutes 2 release the nuttiness; add bay leaves, thyme & rosemary, stir again; add boiling water & cook until peas are tender. The liquid then becomes the stock needed for dishes.

I know this video is a couple of years old but I wanted to let you know that I tried this and it turned out great! I also added some leeks that I had in the fridge that needed to be used. I've been planning on making some stock for some time now but never got around to it. Yours looked so good I just had to finally get it done! This is a great way to use up some of the veggies in my fridge that may be getting a little old but not ready to throw out. I hate throwing out veggies! I wanted to say thank you for your videos. Your meals are simple and hearty, and made with every day ingredients. So many videos include items I just can't get or if I do, I would only rarely use so they sit in my spice pantry for YEARS! Thank you for your efforts. PS... someone in the comments suggested pouring this broth in ice cube trays for smaller servings... That was genius! What a great flavor enhancer for rice! Thanks again!

Tip - if the onion peels are clean, leave them on - they add color. 😊👍

Why not add warm/hot water to vegetables? If you add cold water (as you did) It stops the cooking process. Then you have to wait for everything to heat up again ! Can you explain why you add cold water to veg? Thanks.

Dear Albert, this vegetable broth is so wonderful and delicious, I can't even begin to describe. After making the first batch, and using it in various dishes, I purchased several 2-cup freezers containers, so that I can make and keep it on-hand always. For those of us who are vegan/pescatarian, this recipe is over the top wonderful! Many, many thanks! ♥️♥️♥️♥️♥️

You don't have to PURCHASE 2 cup containers for the freezer: just use washed-out sour cream and cottage cheese containers. They are about 2 cups each and you're not contributing to plastic pollution both by re-using the sour cream tubs, and also by not buying additional plastics. In my part of the world, the lids are interchangeable too!

As always, Alberto, you make things approachable. A useful suggestion is to keep a container in the freezer (or a resealable bag) and put in the end pieces and scraps from when you prep vegetables for other dishes. Save them in the freezer until you have enough to make a broth. Spain on a Fork on a Dime!

I have been canning for about 5 years now. One thing that I have done is keep a bag in my freezer to stick all vegetable trimmings into it and would toss it in with chicken bones to make a great broth to can. But I have been wanting a perfect vegetable broth, I believe you just showed my that! Roasted vegetables should give it that over the top taste!! Thank you!! Be Safe and Blessings! 🌹🌹🌹

I've made quite a few veggie broths from scratch with ingredients suggested by other cooks. NO ONE has ever thought to cook the veggies before adding the water. THIS looks very intriguing. Thanks!

I like this recipe for vegetable broth. The leftover vegetables I would finely blend to add to rice while cooking and or add to Calabaza soup with coconut milk.

I almost make all my broths self. Also when I make them I make bigger quantity and whats over I freeze in Icemaker cubes, so I always have them at hand to add to soups or sauces. Useful video. Thank you for sharing. Happy day everyone

@@SpainonaFork - Mushrooms do make a special addition, they give an incredible earthiness to your broth. I like to use the stems from big Portobello mushrooms that I'm stuffing for another recipe -- that way, you don't waste the stems, and your broth turns out so much richer and more flavorful.

I have made this recipe and it is great. I added a parsnip for a little different flavor. I've also used a multi-cooker and set it on high pressure for 15 minutes and a natural release for 10 minutes.

I like how he lightly fried all the veggies, then blanched it with the cold water and.trapped all that greasy vegetable greasiness into the broth.... done with 100% vegetable oil keeps it vegan, too, although I plan to do a veggie broth to go with some pork...
