I finally made these today not easy but they turned out brill everyone was amazed chocolate stems didn’t come out like the chefs but used apple stalks instead and used ginger biscuits instead of sable ones and they took five days only glazed them today. Thank you chef.

it's no ganache you mean white chocolate mousse, yes its milk and then I'm using heavy cream (follow the recipe in video) for the mold , yo can buy here amzn.to/3cdOUpZ
