Bambara beans or Bambara nuts is a popular dish from Ghana, west Africa and also a readily available street food which I enjoyed growing up and was always my mother’s favorite dish. This nut is rich in protein and typically served with “tatale”, a ripened plantain pancake. Enjoy!!
Ingredients for Bambara nut recipe
1 cup Bambara beans/nuts
500-700ml of water
Pinch of salt
1/4 teaspoon of baking soda
1 teaspoon of chili powder
1 tablespoon of finely chopped seeded habanero pepper
1 tablespoon of finely chopped seeded Fresno pepper
1 tablespoon of molasses
Ingredients for plantain pancake (tatale)
3 over ripened plantains
1 tablespoon of fried onions
1/2 teaspoon of grated ginger
2 tablespoons of chopped scallions
3 tablespoons of roasted cornmeal
1 tablespoon of chopped seeded Serrano pepper
Pinch of salt
