You can make any Indian chicken curry great if you follow 5 simple tips. Cooking Indian isn't magic and it isn't scary. You just need to trust the process.
Ingredients:
4 Tbsp (60ml) neutral oil
2 inch piece cinnamon
5-8 green cardamom (whole pods)
4 cups (900ml) finely diced yellow onion
1 Tbsp crushed garlic
1 Tbsp grated ginger
1 tsp (5ml) paprika
1 Tbsp (15 ml) coriander powder
2 tsp (10ml) cumin powder
1 tsp (5ml) turmeric
1 tsp (5ml) kashmiri chili powder
1 tsp (5ml) kosher salt
1 tsp (5ml) fenugreek leaves (kasoori methi)
1/2 tsp (2.5ml) garam masala
4 Tbsp (60ml) tomato pasatta
2 lbs (900g) boneless, skinless chicken thighs cut into big bite size pieces
1/2 cup (125ml) no-sodium chicken stock or water
3-4 green chilies - chopped (jwala or finger hots are best but you can substitute jalapeno
a handful of diced cherry tomatoes
cilantro to garnish
