i put my epis/spanish mix into ice cube trays...i freeze it then put the cubes in plastic bag...it stays fresh and then you can just use as many cubes as you need

Haitian food is best in Caribbean cuisine in my opinion. It's a shame that more people aren't exposed to it. Top 3 types of food to me are Haitian, Italian, and Japanese in no particular order. Thanks very much for this video!

~Haitian Epis~ Blend all ingredients in a blender: 1. Scallions/green onions 2. Thyme 3. Garlic cloves 4. Shalliots 5. Onion 6. Italian parsley 6. Green and red bell peppers 7. Maggie cube (optional) 8. Oil 9. Scotch bonnet peppers (optional)

I usually make my epis on a day that I will be cooking. That left over epis in the blender will be used with some water either for rice or added to meat while cooking. That thing is gold and will not be wasted. Thanks for the video. I also love the pepper garlic infused oil recipe.

I don't remember us ever using epis in my family, how odd! That looks delicious! I'd add a scotch bonnet if I'm regularly cooking Haitian. (Habanero is the next best thing if you don't have access to the Scothc Bonnet). Thanks for this!

Sorry for late response! Just noticed your comment! Growing up, we made Epis daily using a pilon. Nowadays to save time we blend it, to make a larger quantity. I am pretty sure your mom used Epis!

Your welcome, I believe hot peppers should be an option. When my parents were teaching us how to cook, they always would say, a good cook does not cover the flavor of their food with hot pepper. That's one reasons why I don't go to Haitian restaurant often, you can't enjoy the food because it is to spicy.

One of my in laws is Haitian and he is a good cookI. For more than a decade now, I have been using epis in my food. Anyone's meals can taste better by using epis. Epis makes the difference! I became ill last year and was hospitalized for six weeks and ever since I have been released from the hospital, the smell of Epis makes me sick now. Prior to my illness, Epis use to be a heavenly scent to me. Too bad for me losing my taste buds!! I have to force myself to eat any type of food now! It must be the Meds.that I take! The only good thing that came out of my illness is that I got my youthful figure again! LOL.

I no longer use peanut oil . I use Grapeseed oil but you can substitute it with olive oil, vegetable oil, or any oil of your choice.

That was quick. It takes me longer to cut everything up. I add vinegar to my epis and olive oil so it lasts like 2 months. I use a little water since my blender is cheap and needs some help to blend everything. I use ginger in mine to give the food a fresh and clean taste and I use a lot more garlic. I don’t use shallots and I always forget to buy thyme so thanks for reminding me! I don’t use maggi either but growing up, that’s how parents made epis-with a cube of maggi. Good video!

yvette gerdes ...yes at the time I recorded video, I used peanut oil. You can use whatever oil you use. I no longer use peanut oil.

You have to add more of the other ingredients, so you can balance out the taste.

My, "Haitian," mom never created her own epis. She worked very hard and would cook our meals for the day in the mornings. But every Sunday, without fail she made my dad's "codein." I actually created a similar epis recipe once from Nadege Fleurimond's cookbook & my chicken turned out great. It's out of pure laziness that I do not make my own "epis." We do things on the regular if a habit is created. I personally stay away from preservatives. Different topic: I've been watching the hair videos on You Tube and did a "natural hair recipe," & without the normal preservatives my hair was scratching so within the week I had to clean my scalp because it was probably growing mold. So yes, those preservatives preserve product but at what cost to our health? My mom had to take alot of short-cuts in her cooking and hair maintenance as well but at what cost? She died of cancer. Please do some research on those aluminum pans we cook our rice and food that we "Haitians," swear by. Habits are formed but in the long run are not good for us. Personally I cook in stainless steel and avoid non-stick cookware like the plague. I am long-winded because I care and a little research will confirm my points. Love your epis recipe. Take care.

Regine B ...Thanks for you comment! I am sorry for your lost! In culinary school, I took a nutrition class, that helped open my eye, so I have made changes in the seasoning, food and pots I use. I stop using the Maggie cubes years ago. I now use non-MSG products. I also understand the health issues with aluminum, I switched out all of my pots for stainless steel and cast-iron pots years ago but I still use the one aluminum pot occasional. ( It’s a Choice that I made) I am more concerned about the radiation and pollution that we are exposed to every second of the day. As far as my hair, it has been natural for over 20 years now. I use to permed my hair once every 6 months. I hear and understand what you are saying! Thanks again for your comment.

eddyntm .. about 2 weeks if you add a Maggi Bouillon cube the salt will act as a preservative. You can also freeze it, take it out half an hour before you use it, that will work also.

I love your videos and personality! I think I might have to get in line with this request but, can you please please please put the quantities, at least the estimated amount? African Diaspora folks (black Americans are the same) never do quantities. My mom: "Put a little bit.." Me: "Momma, how much??" My mom, "I don't know, you have to taste it/smell it." Sheesh!

There is two types of parsley the regular one and the flat leaf one which is called Italian parsley. You can use either one, I just happen to have the Italian one on hand.

Jessica Williams .. about 3 to 4 weeks ... make sure you add some type of salt in order to preserve it. You can also freeze it and use as needed

Naomie Alexandre... majority of Haitian’s Fry epis in oil before adding the beans. Your mom my not do it, but many of us do. It is optional but in my opinion the rice taste even better.

You can use a pilon (wood mortar and pestle) we used this back in Haiti.

There is no recipe for epis, we make it depending on one's preference. I shared a simple version. Just blend up the vegetables on the video and add a bouillon cube, it is that simple. I hope that helps.

Haitian epis- 4-5 cloves garlic 6-8 green onions handful of thyme , 2 shallot half a onion , Parsley half of a bunch half red bell pepper, half green bell pepper, 1Maggie cube, Scotch bonnet (optional) Peanut oil (your choice) Thank you 🙏🏽

beatm8ker2012 ...remove the hard part of the stem towards the bottom, you can blend the soft part leaves and stem.

Dorianne Aguste ... your not the only one that adds ju sitro, the epis on my channel is a multipurpose epis. I use this one for meat, rice, sos pwa, and mayi moulin. I sometimes make one only for meat and I add fresh lime juice in it. Thanks for commenting

xnrop ....it’s not in a plastic!! look at the video again and you will see the paper towel, I put the washed vegetables on, is wet. Because I wasn’t going to use the whole parsley, I left the tie on. I don’t owe you or anyone an explanation but I’ll entertain you today. This is how I washed the parsley. I took a large bowl, I filled it with water, then I let the parsley sit in it, allowing the dirt to fall to the bottom of the bowl. Then I take the parsley bunch and run it under cold water rubbing my hands through. it. In case you did not know I am a certified chef!! I have my serve safe certificate!! I know the importance of cleaning all the vegetables, cans surfaces and everything else I use. So keep your negativity and pettiness to yourself you seem to be very miserable. Wrong page.
