Plum Wine or Umeshu (梅酒) is a Japanese plum infused alcohol, a delightfully refreshing drink served straight, on the rocks, bubbly with fizzy water or even hot.

1 kg (2.2 lb) green plums
800 g (1.8 lb) white rock sugar
1.8 L (7.5 cups) shochu (Use vodka, Japanese “white liquor”, or any distilled spirit/liquor above 35% ABV "alcohol by volume")

I think Korean grocery stores have these green plums right? I assume Korean has a similar recipe? Do you use this kind of big jar too? You should make a couple of jars so when you are making this again next year you have a few jars to enjoy until 2nd year one is ready 😉😉

Your umeshu is so elegant, Nami-san! I wish I could drink it, but I suffer from Asian flush - even if I take a little sip of alcohol. I enjoy many types of Japanese alcoholic drinks, but umeshu is my favourite! I've only tried Choya umeshu which is delicious, but I will definitely make my own one day!

Nami this video made remember my childhood , when my grandma used to make umeshu and I used to watch my Father enjoying it as a summer refreshing saké , but sadly I was not allowed to drink it , I only used get orange juice 😂😂 I will definitely try to make it home rather than store bought .

Hope you enjoy this recipe! Yes, homemade is better than store bought. I am not much of a drinker so I enjoy it with soda water (dilute a bit). For this video, I drink it straight. :D It was delicious.

Love drinking homemade umeshu when we visit Japan. My wife's grandmother makes stuff that is so much better than what you buy in the bottle and it seems to get better with age. Unfortunately we have been unable to find the green plums where I live in Australia but my wife uses the same process to make other drinks for different fruit.

Her grandma must make delicious umeshu. Yeah I wish these green plums are easy to find. Hopefully more and more Japanese ingredients are easily available. Compared to 10 years ago I feel like I can buy more things. Slow progress but it's happening! :)

Great recipe. I had never seen one for making plum wine at home until now. The hard part would be waiting for it to ferment and be ready for drinking. Thank you for showing us this!

Indeed. I can make so many jars of this as it's easy to make... but waiting for a year... it's tough. The best part starts 2nd year as you have plum wine from year 1 to enjoy while waiting for year 2. ;)

I don't think any fermentation takes place here, just steeping. ABV is too high to allow any living cultures to develop.

Any tips on making the umeshu more sour? Add more ume or less sugar? I used your recipe last year and it’s great! Want to experiment a little this year.

Can we slice the plums before we put them in the shochu? I think that could enhance the flavor or shorten the soaking time.

I did this last year, but I did it near the end of the season when the plums were starting to overripen... Thanks for reminding me to start my second batch! Quick question, can you use shochu that is under 35% alcohol? Last year I used vodka and while the taste is good, the alcohol smell is still very strong. It's been only 10 months though, so maybe that could the reason why the smell is still so strong?

Hi Jay! Ripen plums are used to make umeboshi. Earlier green ones are for umeshu. :) Yes, this is the good time to start making. :) It's recommended for above 35% for food safety. Less alcohol, food might go bad (without realizing) and it can be poisonous. I think there were some cases people got food poisoning. So Japanese government says alcohol must be above 35% to be qualified as umeshu. Or something like that. Basically to make sure it's safely consumed. :)

Hi Chris! I'm not too familiar with the process for other fruit wines. This recipe works for these sour green plums. Maybe you might want to research on the liquor made with strawberries/raspberries. Why don't you just cut the plum instead of just removing the stem. Thinking of trying this with apples instead since plums are out of season. Anyone have advice?

Thankyou for making this video. If it is ok, can i ask if these plums are green colour when they are ripe or are they green because the recipe uses early unripened fruit? The house i have moved into has a plum tree and the fruit have not ripened yet. And could be an opportunity to make this wine.

Umeshu is definitely one of my favourite drinks I've ever tried! It's definitely worth trying if you've never had it before. If you can't find the plums you can also buy ready made umeshu in Asian supermarkets, just make sure it's Japanese plum wine as there are other Asian plum wines which look similar but are different.

Hi Jason! Yeah, I used to buy Takara Umeshu... but once you taste homemade one, I can't go back. It's too bad ume (green plums) are hard to find... this is such a delicious drink!

Rock sugar should be used so that the sugar is melted slowly throughout the time.

You can remove them after a year. I have both types, ones without fruits (taken out) or ones with fruits in for past 3 years... :)

Can you reseal the wine once you open it after a year and continue aging it? If not, what's the lifespan of the wine once opened?

You can open to drink and close the jar... some people save it for over decades! But it's hard not to drink all of it... maybe make a couple of jar and enjoy them over several years... so no worries about re-sealing. :)

Good question but I don’t have an answer at this time without researching.... I think you can but the process for different fruit wine is different and not sure if apples can stay inside for 12 months. I don’t think so....

People make other fruit wine, but I'm not familiar with it. Rice wine as in sake? No, I don't know how to make it... that's not easy to make....

you can make fig vodka (fresh figs, vodka and vanilla pods - keep in fridge 2 weeks and strain before serving) tbh i think you can pretty much any fruits (like citrus peels with vodka and sugar) etc. japanese rice wine is pretty hard to make at home imo, i think it's easier to make korean rice wine (makgeolli) if you have all the ingredients available

Check our Nijiya (and other Japanese grocery stores) and korean grocery stores in May! It’s only short season. If you follow my IG I usually inform everyone 🤗

Yes, that's okay to use. Preferably 35% above.

Is this the only way Umeshu is made because its not really wine. I was imagining wine made using plums/ume rather than grapes, but this is making a liquor from spirit, sugar and plums. This isn't a bash btw I like making liquors this way.

Well, in Japanese it's called Umeshu 梅酒 (plum liquor) but somehow it is translated to Plum Wine in English. I don't know why, but always English translation is not accurate....

Pickled plums are made with more ripen plum (not this early). You can serve this plum wine with the plum in the glass.

Hi Nami! I live in the bay area and I was wondering if they sell the plums at the mitsuwa store in San Jose? Also I have trouble finding sochu that is 35% alcohol, did you also get this at a japanese grocery store? Do you remember roughly how much it was per bottle?

I go to Nijiya and get all the ingredients for this recipe. If you can’t find in Mitsuwa, try Nijiya in SJ or Mountain View (I go to San Mateo store).

Hi there! Apricots/梅 don't grow where I live, but peaches do. Can this be done with unripe peaches instead, albeit not traditionally?
