What type of oil and how much did you use to fry the seafood?

Arguably one of my fave dishes in Italy. Whatever is fresh, lemon over it. Uprated, shared.

Joe Serrano I never had it with pasta -- was always on its own. Seemed to need only lemon, really ...

Joe Serrano It's fine just plain. I have seen Italian parents with children at restaurants and they sometimes indulged them, let them have a plate of good, homemade fries, and a Coke! Possibly not the best discipline, but I recall some pretty content little kids having a treat! I do like, for example, squid fried with this method, and those can be fun with a tomato dipping sauce -- medium, but the hot right in the middle. We liked that in New York, with fully cooked tomato-y green beans and huge pitchers of heavy wine at Puglia in Little Italy. Jorge Buccio would play and sing and we'd all sing along, a tradition there. Big tables, benches. Then, off to La Bella Ferrara for dessert and fun, fancy coffee! :)

I've never tried smelts. Fresh seafood is a luxury. Tinned sardines are as close as I've been.
