Rose impresses with each new video. She has got unseen talents and a wonderful tolerant attitude to Jeff's loaded questions. Rare in the 21st century, off the grid is no doubt a great help too in keeping sane. It all makes sense, unlike lives elsewhere, meaningless and superficial. How do you manage to keep others from disturbing your well balanced world?

Nice Jeff & Rose! We make a gallon jar every 4 days, I like it but Jennifer doesn't...more for me!! We have 3 jars fermenting all the time and we harvest and make a fresh batch every 12 days. We rarely do a second ferment with fruit as we don't have the flip top bottles. Thanks.

Scoby jerky/bacon is a real thing! There are recipes for scoby jerky...I know I’ve seen them somewhere online. Now I want to make kombucha again!

Honestly you've got more then 2 mothers there. I've heard you can make something like a fruit leather out of it. I feed the extra mother to the chickens cause its a good probiotic type things going on in it. How I start kombucha ....is boil my 4 qt. Kettle of water then stir in 3/4 cup organic evaporated cane juice until dissolved . Then I add whatever kind of tea I want. I even buy the Walmart peach (tea bags) tea. Like about 5 or 6 tea bags to the boiled water and let steep until it's room temperature. Then I have my clean glass gallon jar ready . 1st I pour in the store bought kombucha then my tea .stir with a wooden spoon. Cover with a cloth and a rubber band to keep the cloth on . Setting in a warm place out of direct sunlight. The 1st time I make a new batch that has to format it's own scoby I leave that tea sitting more then a week. More like 3 week maybe. By then it's got a nice but thinner scoby. Then you can proceed with the rest as you see in this video.

To start the first batch I use 5 tea bags to a 1 gallon of water, steep and cool, then dissolve 1 cup of Organic Sugar into the tea, when it cools (to room temperature) add the SCOBY then cover the jar with cheesecloth (it needs the air). Sit that in the pantry (warm, dark place) undisturbed for the next 2 - 4 weeks. After that time, bottle the Kom with fruit (enough to cover the bottom of the bottle) set in the pantry for a few days, test over the sink. Once bubbly store in fridge to stall fermentation (so they don't explode). I saved store bought Kombucha bottles as I was sampling their flavors - Tart Cherry is my favorite. Remember not to let any metal come in contact with the SCOBY or the tea mixture (use a wooden or bamboo spoon). The SCOBY will gobble up the sugar and produce a yummy fermented drink - great on the rocks with a twist (very little alcohol < 1% and terrific health benefits).

Frozen berries are juicier because when frozen the moisture expands and crushes the cell walls of the berries so when they thaw there is more available juice. I have found in making wine the same holds true.

I brew kombucha - it's actually easier to add the sugar after the tea is steeped and cooled. Sugar feeds the SCOBY (symbiotoc colony of bacteria and yeast) that produce the fermentation (bubbles). Fruit will do this sufficiently without adding honey (would be too sweet for me), to each his own. Love the music. I've also used cranberries, elderberries and dark cherries. I don't strain the fruit so raspberries aren't my favorite because they turn to mush. If you get bits of SCOBY in the bottles and leave them long enough they will grow new SCOBY's the diameter of the top of the fluid in the bottle. If you don't have a spigot in your big jar, just use a glass cup. Note: don't use metal in the processing.

Scoby (mother) is very healthy for you to eat but not plesant. Dogs on the other hand, love scobies and the leathery texture. It's also very healthy for them. You can call it a mother being it does come from apple cider vinegar with the mother. Love your vids!

So technically, what ya'll are calling the "mother" is actually called a pellicle. The "mother" is the liquid after fermentation. The SCOBY (symbiotic culture of bacteria and yeast) is suspended in the liquid...which is why you can take just the liquid and a new pellicle will form. The pellicle is made by the mother... it is not the mother. :) Enjoyed the video!

so honey doesn't kill of the bacteria of the scoby?? huh everywhere i have seen says honey is a no no. Great video as always!

Raw honey can kill the bacteria of the scoby during the first ferment, so I use cane sugar. The second ferment is done in individual bottles with fruit without the scoby, and so therefore I use honey.

when i was a lad dad & i decided to make Nettle Beer the bottles had screw on cap' s when the time was up he diced to open one he decided to gip it in his teeth to unscrew it well it Took me half an Hr to wake him up . i thorts he had snuff it was so lowd & the blood was evry wear it had knots about 6 of his teeth out . avenchely he came round & we fixist him up . not as much blood as the day he cut of his 3 fingers & top of is thrum though that's a story in it's self but Needles to say he wouldn't touch the natal bear them i could net open i throw bricks at & the went of like grands. but i must say it was a lovely drink The 60 bottles lasted me a long time a cross better ginger bear with out the ginger sweet & fizzy in fact i think had we put in ginger it would have surpass ginger beer. But as it was it was more like sweet Campaign. i nicknamed it the poor mans champers. les England to make it you cut of all the top's of the nettles with the clump's on.

I really want to make kombucha or water kefir as You can also make sourdough bread with it! I have been trying to find out if I can use sourdough starter to make kombucha or kefir but had no luck! I might have to do some experiments!

When you freeze fruit the moisture inside of them turns to micro ice crystals which lead to micro perforations that, when the fruit is thawed, causes juices to flow more freely

Have you ever tried making a natural berry syrup (just reducing the berries over heat and mushing them) and then syringing it into the bottles? Right now I make it the same way, with frozen fruit, but I've heard you can use a concentrated syrup as well. Great idea with the honey though! I might try that sometime.

Do you have any issues with the fruit in the bottle getting mold? Just started my 2nd fermentation with some cherries and since some are floating on the top I’m worried about mold. Thanks!

Samara, I've never had a problem with the fruit moulding. My fruit floats on top as well and you shouldn't have any issues. Hope it turns out great!
