If fermentation is defined as "the process of decomposing organic matter through the action of microorganisms or enzymes", maltose made in accordance with the ancient method can also be included in the ranks of fermented foods. Using wheat and glutinous rice as raw materials, the enzymes of wheat are used to release the starch sugar in the glutinous rice, and then boiled into a thick paste.
Maltose is a low-sweet starch sugar that dissolves in water and turns into glucose. Its sweetness is only about 40% of that of sucrose. It is low in calories and easy to digest.
