My tip: I stopped peeling the beans a long time ago. There’s just no need for it. You loose nutrients and leaving the skin on doesn’t change the taste or appearance as long as you have a good blender. I also try every kind of beans I can. I used black beans the other day (interesting color and slightly different taste), I’m trying pinto bean moi-moi tomorrow. And thank you for the foil/plastic bag hack!

nextime try to fill the baking pan with water and place it on the base of the oven{inside} it help to moisten it and prevent that dried edges

When I bake in the oven, i put foil to line pan, pour in some water, put the foil portions in the pan that the water is half way on the outside of the foil pans. Cover the whole pan and portions with a foil sheet (optional), the water steam bakes that it doesn't burn and the moi moi would be cook but moist due to the steam from the water. Your moi-moi was burnt on top and looked dry due to lack of steam moist during the baking.

that was awesome. ow i wont burn my plastic bowls while steaming. also i find that instead of hand crushing the beans to take the skins off, i just pour into the blender with water and pulse. it completely takes the skins off then i can rise over a colander. :)

I find beans makes you less gassy if soaked over night, and it also absorbs a lot of moisture which is all good too..

oven baked tasted cakey (felt like a cake texture) this was because it wasn't in a water bath. the pot steamed was moist and gave more feel of actual moimoi

Oil can be used to coat the walls and bottom of the tin. Lightly coated oil

you can bake it. Baking gives it a cake flavour. Putting it in a water bath and baking it, gives it the moist flavour that we are familiar with.

i am so sorry dear. Gas mark 5/6 or 180 and bake for 35-40 mins
