How to Make Nishime (Japanese Simmered Vegetables Recipe)-Cooking with Mom

INGREDIENTS:
1/2 chicken thigh
1 small piece lotus root
6-8 snow peas
1/2 small bamboo shoot, boiled
1 small carrot (or 1/2 medium)
1 block konnyaku
3 dried shiitake mushrooms
3 tbsp soy sauce
2 tbsp mirin
2 tbsp sugar
1/4 tsp dashi powder
1/2 cup water
DIRECTIONS:
Quickly reconstitute shiitake by combining with water and a little sugar. Cover and microwave for about 3 minutes. Set aside. Prepare snow peas by tearing off the ends and tough string that runs along its side. Flash boil in salt water for just 30 seconds. Drain and set aside. Next peel and cut the lotus root and set in water to prevent discoloring. Slice bamboo shoots. Peel and cut carrots into bite-sized pieces. Slice the konnyaku and make a slit in the center. Bring one end of the konnyaku through the center and pull to make a knot. Drain and cut cut shiitake into halves. Cut the chicken into bite-sized pieces. Take lotus roots out of the water and set aside.
Put some oil in a large saucepan and stir-fry the chicken until it changes color. Then add the rest of the ingredients except for the snow peas. Cook for 1 minute. Add in the liquid reserved from the shiitake. Cook over medium heat for 3 minutes.
Add in the powdered dashi, sugar, mirin and soy sauce. Cover with aluminum foil and cook covered for 15-20 minutes, giving it a quick mix halfway through. Garnish with the snow peas.

I wanted to press the "thumbs up" button many times over! I loved this video. Honestly, I had tears coming out of my eyes; you will laugh at me, but the food looked so delicious, and I was so glad to see you all together. I love nishime, and it looked amazingly good! I really appreciate the additional suggestions for people who are vegetarian. It is good to know that konbu can be used for additional flavor. I actually like chicken, but I can't eat meat for health reasons. Thank you all so much. I'm glad we have a few more lessons from Shinichi's mom to enjoy. If she's already left to return to Hawaii, I hope she's had a safe trip and is doing well. I wish her good health. Arigatou gozaimashita!

I can certainly imagine that. I think it would be natural to feel sad at parting. I think you said you'll be going to Hawaii soon. Maybe that is the good news this time, that it won't be long until you'll be together again. I am sending lots of good thoughts to you, Satoshi, and Justin as well. :-)

This is true many of us who had Japanese obachans I was very respectful to mine. She passed at 96 yrs. in 1990 and she was an excellent cook. Luckily i learned some of her recipes.

@Hessian MGTOW less respect to elders is not because of modernisation or medicine. Asians are modernising too but they respect their elders. Westerners don't because of their religion that don't teach them to respect elders but only to a fake God which they treat as their "Lord" and even thank it during every meal, thus forgetting or neglecting their parents.

Watching these videos (I just discovered today) bring tears of joy. I lost my Obachan earlier this year and cooking Nippon Ryori was our favorite thing to do together. I will live with all the recipes she taught me through the years.

Nishime is one of my fav dishes that I make it frequently. It's delish and good diet food (to me) 🙂 I used sake when I make nishime 🤭☺ sometimes I even add chinese cooking wine, too, to make it more bold taste with liquor in it because I just love dishes cooked with liquor like wine, brandy, cognac, etc 😆 I also added a lil sesame oil at the end 😁

I love it when TabiEats Mom cooks! Lotus root is so pretty. I have never eaten that before. I am hoping my Asian market has lotus root and the konnyaku for making this Nishime. I made your Mom's Shoyu chicken for dinner 2 nights ago and took the leftover to work with me for lunch and a co worker asked for a taste and then she asked for the recipe to make it too! Thanks TabiEats Mom for sharing your recipe and for you Satoshi and Shinichi both for preparing Shoyu Chicken with Ericsurf6! It was soo delicious. Tell your Mom we have many happy tummys now! The next time I fix it I will add more crushed red pepper or maybe some Korean chili pepper powder as you couldn't even tell it had any of the pepper in it.

So happy you enjoy my mom's cooking! Now if you cannot find lotus root and konnyaku, you can simply omit them and add kabocha pumpkins or potatoes instead. So happy to hear that you enjoyed the chicken dish! yay!!!

So I like simple and quick recipes. thanks so much for your kind words. Konnyaku is a traditional Japanese jelly-like food made from a kind of potato called "Konnyaku potato. The Konnyaku potato is native to Indonesia and is a kind of herbaceous perennial plant called "Amorphophallus Konjac". Konnyaku potatoes are cultivated for food only in Japan, but wild forms grow naturally in Southeast Asia and China. It was originally introduced to Japan as a medicine in the sixth century and has been eaten for almost 1500 years in Japan. Lotus root is an edible rhizome (root) of lotus plant. Lotus is herbaceous, perennial aquatic plant belonging to Nelumbonaceae family. It is popular as renkon in Japan.

I am also trying to find out about konnyaku . Can someone help me understand what that Jelly is? Where to buy it in the states? is it made from a powder? Do I buy the powder? And how does it not melt? Seeing that it does not melt, does it break down good in digestion? What are the health pros and cons with this Jelly? Anyone know?

Kon-yaku is made from a jpnz potato, processed into jelly like block. Pckd w/ h2o, in plastic (heavy duty) bags. (Also chkout kon-yaku noodles for sukiyaki). U can find it in any Asian mkt. Look in deli w/ the tofu, miso paste, fresh noodles, pickled veggies, etc as it must b stored cold! That being said, I'm a 3rd generation Jpnz American who's not into the block kon-yaku nor the lotus root. The block doesn't pick up the flavor of the broth much. Plus texture is gummy (bear) like. The lotus root is hard, tough no matter how long u cook it. Try them tho. It's not as awful as I make it sound. I use gobo (burdock) root in place of the lotus. & eliminate the kon-yaku altogether. (I do use & like the noodles in sukiyaki.) This dish is jpnz cold weather comfort food & is also eaten for New Years Day celebration. So... Omedeto gozaimas...HAPPY NEW YEAR to y'alls! P.S. As far as digesting goes, I wouldn't b worried about it. They been eating it for eons. Jpnz food is inspected for cleanliness, safety. That's y it's so expensive compared to other Asian countries' food products. And Jpnz food is typically healthy too.

domo arrigatou gozaimashita I am so thankful to find this recipe. I have been traveling to Japan for work since 2007. Thanks to y'all I will be able to enjoy the oishi comforts of Nishime anywhere. This is one of my very favorite dishes to tell my friends about. Now I understand the recipe completely and will be able to show and share a tangible experience. I am excited to try this! I lost my own mother a dozen years and -- through this video, I was reminded of her today and her 御節料理 for お正月 -- most especially her お煮染め ☺️ She made hers with 里芋 so I'll be adding that when I give this dish a try but I was wondering: what's the difference between "Nishime" and "Nimono"? But, I kind of noticed something. Did she hurt her finger? I might be wrong, but it kind of seemed like it was wrapped with a medical plaster . お母さん、気をつけてくださいね。

This is an emblematic comfort japanese food, every nikkey family has it's own recipe, right? kombu, gobo, yam is added on some, I like it anyway! Reminds me a lot of my childhood, my mom used to make a huge portion to last for days, lol

Besides Chirashi, Nishime is all time favorite Japanese dish. Thanks for this video. I've made it in the past and have added aburage to it which soaks up all the ono flavor. Keep at it guys and mama-san! You're my new fav youtube station.

It is so cool to see you guys only Japanese. This is a really delicate process, you guys will be in Hawaii so hopefully we will be able to see mother!!! Omg mother please have a safe flight and we will miss you SOOO much!!!! Nonetheless It looks amazing!!!! Can I still cook it without the konnyaku?? Lotus root looks so pretty in the end when it came together!! Awe mother lookin out for shinichi soooo cute OMG 😌 pro level mother, I hope mine will turn out like this!!!! Oooooooo deff adding potato 😭. Thank you mother for cookin for us hope the rest of the stay in Japan will be relaxing and satoshi and shinichi taking care of you, lots of love ❤️

It does look very delicious and fresh! I don't believe I've ever eaten lotus root but I would like to try it. My Daughter will be in Hawaii for a few days not long from not. She's very excited!

ohhh you must try lotus root. It has a similar texture to water chestnuts but much more earthy and "meatier". Hope she enjoys Hawaii!

We also enjoy your cooking shows, and with your Okaasan there it makes it a light and very homey feeling you know. We love your mom and even though she will be leaving on Friday we home she has enjoyed her time in Japan with you both. I hope you guys took her out to eat so she can enjoy foods where she don't have to cook. 😻😉💗🙏 May she have a safe trip back to Hawai'i!

I love bamboo shoots💕 I've never had the lotus root or konnyaku before though. I wonder what their nutritional values are🤔Many thanks to Mom for sharing her recipes and cooking for us!

I believe lotus roots don't have much nutritional value except fiber. As for Konnyaku, it's supposed to be very good for helping flush out toxins our of your body and is also has virtually zero calories so it's good for dieting.
