You can certify how fresh your fish is, 1. When you buy directly from pond to dry by yourself 2. The packaging 3. Smelling or sniffing the fish.

Palm oil is one of the worst oils to cook with. It’s very inflammatory. Just research it. Thanks for sharing and be safe family

She's using virgin palm oil which is completely different from the over processed stuff. It's packed with antioxidants and contains a rare form of vitamin E. It is actually one of the healthiest on the planet and forms one of the cornerstones of West African cuisine.
